Ok first things first…
OH MY GOODNESS I'VE REACHED 100 FOLLOWERS!!!
What? It seems like just yesterday, I was blogging with bad pictures and 17 followers.
Thank you to everyone for following and all the encouragement I get from you!
I'm so thankful for my blog and the amazing people I've met through it ,with passions for
food just as big as mine.
So as a little thank you, I made you some chocolate cookies.
Here you go. Take a bite into that chocolatey, cakey, fudgey, amazingness.
ORRRRRRRR… You might just have to make them yourselves.
Because one- you can't eat your computer screen. And two- I'm halfway
around the world from most of you {if you're "new here" click to find out why!}
so I can't mail them to you. Oh gosh, I wish I could.
I made these this afternoon and I planned on setting them in the fridge
while my mommy and I went out to coffee to have some girl time and do a
new bible study we hope to do regularly. BUTTTTTT we got stranded at the
coffee shop {long story} so they were in there for more than planned.
The dough. OOOOOH the dough. It's like fudge. I was literally
almost considering not making it into cookies and popping it in a bar pan.
For reals. It's just that great! I swear, half of the stuff went in me before
it made it to the oven. (;
Soft Chocolate Cookies
1 c. butter, softened
1 1/2 c. sugar
2 eggs
2 tsp. vanilla
2 c. flour
2/3 c. cocoa
3/4 tsp. baking soda
1/2 tsp. salt
In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture. Cover and refrigerate for 1 hour or until easy to handle. Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Flatten with a fork if desired. Bake at 350 degrees F for 8-10 minutes or until the edges are firm. Remove to wire racks. Dust warm cookies with confectioners' sugar.
