Funfetti Cookies


I made these cookies long ago and LOVED them!
They're perfectly chewy, cake batter-y, and 
colorful {which is probably my favorite part}!

So since I had some cake mix left over from those 
Easy Cake Batter Truffles, I figured I'd make these as 
well as the Banana Chocolate Chip Cookies to bring
to the conference this week... 

A little "OOPSY"... I forgot to refrigerate the dough
before popping them in the oven. WHOOPS! But they
turned out like the same as the last time I made them.
GOOD DEAL! :)

Funfetti Cookies
3/4 c. flour
1 1/4 c. funfetti cake mix {I used my yellow cake mix and added truck-loads of SPRINKLES}
1/4 tsp. baking soda
3/4 c. butter
1 egg
1 egg yolk
2 tsp. vanilla
1/2 c. sugar
1/2 c. brown sugar
1 c. chocolate chips {which I left out... Something about cake batter, sprinkles, AND chocolate chips, doesn't sound appealing to me.}

Cream together the butter and sugars. Mix in the egg, egg yolk, and vanilla until creamy. 

Add in the flour, cake mix, and baking soda.

Stir in chocolate chips.

Refrigerate for at least an hour. {or not. hehehe;)}

Preheat oven to 350ºF.

Scoop onto cookie sheets and bake for 12-15 minutes or until 
the edges are golden brown.

Banana Chocolate Chip Cookies


So tomorrow, we're going to a conference for the Namibia missionaries 
until Tuesday. I figured I'd bake some 
goodies for my tent-mates...

{of course. How could I go somewhere and NOT bring anything?} 
I was thinking something a little... different. And BAM!

Banana chocolate chip cookies! 

Notice they have ACTUAL chocolate chips... 
We got a care package the other day with BAGS of 'em! 
And they weren't even melted. :) 

The cookies got a little overdone on the bottom... again...
 Have I mentioned how much I hate that oven? 


Banana Chocolate Chip Cookies
1/3 c. butter
1/2 c. sugar
1 egg
1/2 c. mashed banana
1/2 tsp. vanilla
1 c. flour
1/4 tsp. salt
1/8 tsp. baking soda
1 c. semi-sweet chocolate chips

In a small bowl, cream butter and sugar until light and fluffy. Beat in egg, banana, and vanilla. Combine the flour, baking soda, baking powder, and salt; gradually add to creamed mixture and mix well. Stir in chocolate chips.

Drop by tablespoonfuls 2 inches apart onto baking sheets coated with cooking spray. Bake at 350ºF for 9-11 minutes or until edges are lightly browned. Remove to wire racks to cool. 

P.S. 
Since, I'm going to be gone over Sweet Saturday, I'm just going to 
extend this weeks PARTAYYYY until NEXT Saturday! Sound good? 
That way you have a little more time to enter this week's creations too!

Peanut Butter Oatmeal Cookies


My first pan of these cookies were an absolute fail! I was thinking of taking a picture but I wouldn't want you to see the horror. ;) They bottoms of the cookies that were at the back of the oven were BLACK, yet the ones in the front of the oven were golden. I swear, the oven that we have may be the first one ever invented. 
Peanut Butter Oatmeal Cookies

1 cup butter or margarine, softened
1 cup packed brown sugar
3/4 cup granulated sugar
1 cup peanut butter
2 eggs (or egg substitute)
1 1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 cup quick cooking oats
Directions:
Preheat oven to 350 degrees. In a large bowl, cream butter, sugars, and peanut butter.  Beat in the eggs until well blended.  Combine the flour, baking soda, salt, and oats; stir into creamed mixture until well mixed.  Drop by teaspoonfuls onto ungreased baking sheets about 2 inches apart.  Bake for 10 to 15 minutes or until lightly browned.
Freezing Directions:
Allow to cool completely before transferring cookies to gallon freezer bags or freezer safe containers.

Honey White Bread


I love bread! Especially homemade bread... it doesn't get much better than the smell of the fresh stuff right out of the oven! The one thing I don't like however, is how long it takes to rise. I want to be able to make it and eat it! But sadly that isn't the case. I don't make it very often- this was about my third time.... It's always worth the waiting!

Honey White Bread
{Ina Garten's recipe!}
Ingredients
1/2 cup warm water (110 degrees)
2 packages dry yeast
1 teaspoon sugar
1 1/2 cups warm whole milk (110 degrees)
6 tablespoons (3/4 stick) unsalted butter, melted and cooled
1 1/2 tablespoons honey
2 extra-large egg yolks
5 to 6 cups all-purpose flour
1 tablespoon kosher salt
1 egg white, lightly beaten
Directions
Place the water in the bowl of an electric mixer fitted with a dough hook attachment. If the bowl is cold, be sure the water temperature doesn't drop below 110 degrees F. Add the yeast and sugar; stir and allow them to dissolve for 5 minutes.

Add the milk, butter, and honey. Mix on medium speed until blended. Add the egg yolks, 3 cups of the flour, and the salt. Mix on low speed for about 5 minutes. With the mixer still on low speed, add 2 more cups of flour. Raise the speed to medium and slowly add just enough of the remaining flour so the dough doesn't stick to the bowl. Add the flour slowly; you can always add more but you can't take it out. Knead on medium speed for about 8 minutes, adding flour as necessary.

Dump the dough out onto a floured surface and knead by hand for a minute, until the dough is smooth and elastic. Grease a bowl with butter, put the dough in the bowl, then turn it over so the top is lightly buttered. Cover the bowl with a damp towel and allow it to rise for one hour, until doubled in volume.

Grease two 9 x 5-inch loaf pans with butter. Divide the dough in half, roll each half into a loaf shape and place each in a prepared pan. Cover again with the damp towel, and allow to rise again for an hour, until doubled in volume.

Meanwhile, preheat the oven to 350 degrees F. When the dough is ready, brush the tops with the egg white and bake the breads for 40 to 45 minutes, until they sound hollow when tapped. Turn them out of the pans and cool completely on a wire rack before slicing.

Cheesecake Brownies


Cheesecake Brownies
1 package brownie mix {or your favorite homemade recipe... this is mine!}
1 {8 oz.} package cream cheese, softened
2 tbsp. butter, softened
1 tbsp. cornstarch
1 can sweetened condensed milk
1 egg
1 tsp. vanilla
1 container {16 oz.} chocolate frosting {or homemade recipe...}

1. Preheat oven to 350ºF. Grease 9x13 in. pan.

2. Prepare brownie mix according to directions. Spread into prepared baking pan.

3. In a medium bowl, beat cream cheese, cornstarch, and butter until fluffy. Gradually beat in sweetened condensed milk, egg, and vanilla until smooth. Pour cream cheese mixture evenly over brownie batter.

4. Bake in preheated oven for 45 minutes or until top is slightly browned. Allow to cool; spread with frosting and cut into bars. 

Chocolate Frosting
1 stick butter, softened
1/4 c. milk
1-2 tsp. vanilla
3 tbsp. cocoa
2-3 c. powdered sugar

I saw these a really long time ago and wanted to make them right away! But since they had so many ingredients, I kept putting it off. Something went wrong with the brownie/cheesecake layer... when I took them out of the oven it was all lumpy and weird looking. But looks aren't everything! They were amazingly delicious! Three words to describe them... classic gone crazy! :)

All I really need is love, but a little chocolate
 now and then doesn't hurt!

Coffee Cake Muffins



I made these amazing muffins for a girls bible study we had at our
house yesterday... Everyone loved them and by the time the girls left,
there were only 2 muffins that survived! ;)z

Coffee Cake Muffins
Muffins:
2 1/2 c. flour
1/2 tsp. baking soda
 1/4 tsp. baking powder
1/2 tsp. salt
1 1/4 c. sour cream
2 tbsp. butter
1 c. sugar
3 eggs
1 1/2 tsp. vanilla

Topping: 
2 1/2 c. flour
1 tbsp. cinnamon
2 tbsp. butter
3/4 c. brown sugar
3/4 tsp. salt

Glaze:
1 1/2 c. powdered sugar
3 tbsp. milk

1. Make topping; refrigerate for half an hour.
2. Preheat oven to 350ºF. Line 24 muffin cups.
3. make muffin batter by creaming together the butter and sugar. Beat in eggs and vanilla.Stir in dry ingredients. Gently fold in the sour cream.
4. Fill muffin cups 3/4 full. Sprinkle with topping.
5. Bake 20 minutes or until toothpick comes out clean. Let cool for 5 minutes before removing the muffins from pan.
6. While muffins are cooling, whisk together the glaze. PLace muffins on a wire rack over a baking sheet and drizzle with glaze.

Easy Cake Batter Truffles

Here's a yummy and easy-peasy recipe for cake batter truffles incase you missed my guest post at Grateful Belly last week!

Easy Cake Batter Truffles

Ingredients:
1 ½ cups flour
1 cup yellow cake mix
½ cup unsalted butter, softened
½ cup white sugar
1 teaspoon vanilla
1/8 teaspoon salt
3-4 Tablespoons milk
2 Tablespoons sprinkles

Truffle Coating:
16 ounces (8 squares) almond bark (or white candy melts)
4 Tablespoons yellow cake mix
Sprinkles

Beat together butter and sugar using an electric mixer until combined. Add cake mix, flour, salt, and vanilla and mix thoroughly. Add 3 Tablespoons of milk or more if needed to make a dough consistency. Mix in sprinkles by hand. Roll dough into one inch balls and place on a parchment or wax paper lined cookie sheet. Chill balls in the refrigerator for 15 minutes to firm up.
 
While dough balls are chilling, melt almond bark in the microwave in 30 second intervals until melted. Stir between intervals. Once melted, quickly stir in cake mix until incorporated completely. Using a fork, dip truffles into almond bark and shake of excess bark by tapping the bottom of the fork on the side of your bowl. Place truffle back on the cookie sheet and top with sprinkles. Repeat with remaining balls until finished.

Chill cake batter truffles in the refrigerator until serving. Makes around 24-30 truffles.

A yummy way to start the morning...


Fresh Banana Smoothie
8 ice cubes
2 bananas
1 c. milk
1/4 c. orange juice
2 tbsp. honey

Put everything in a blender and blend it up until smooth{ieeeeeee}!

Ooey Gooey Chewy Chocolate Chunk Bars


Well these lovelies were not actually supposed to be like that! I forgot to 
look on the back of the recipe card for the instructions {oops.} So instead I mixed all 
the ingredients together {double oops.} I didn't think they would turn out this good 
good but after adjusting a couple things on the recipe for you... TADAAAAA! They're amazing!
Isn't great how sometimes a so-thought fail can turn out so beautiful {and delicious!!!}? 
But I'd like to make the right thing sometime because they looked pretty dang delicious!

I've noticed lately, every single one of the yummies I bake have been turning out SPECTACULOUSLY! These Ooey Gooey Chewy Chocolate Chunk Bars 
{or OGCCC Bars for short! lol:)} were so chewy and gooey! Pure yumminess! 

OH OH OH! I've gotten a lot of comments from my dear followers saying they 
were going to bake some of my recipes! If you ever blog about them, comment with a link... 
I'd love to see them! Also, thanks to all of my new followers!!! I'm so excited to get to know y'all!

Ooey Gooey Chewy Chocolate Chunk Bars
1 1/2 c. flour
1/2 c. brown sugar
1/2 c. butter
1 chocolate bar, chopped into chunks
1 can sweetened condensed milk
1 egg
1 tsp. vanilla

Preheat oven to 350ºF.

Beat butter, egg, brown sugar, and vanilla until smooth. Mix in sweetened condensed milk.

Add flour and chocolate chunks. Stir until combined.

Spray a 9x13 pan and pour in the batter.

Bake for 25 minutes or until golden brown around the edges.

Toffee Bars


No words can describe how AMAZING these were!
Quick, easy, and stinkin' delicious!!!
 I'll leave you at that... 
I think you'll just have to find out for yourself!

Toffee Bars
1 c. butter, softened
1 c. light brown sugar
1 tsp. vanilla
1 egg yolk
2 c. flour
1/4 tsp. salt
2/3 c. chocolate chips/3 chocolate bars
1/2 c. chopped nuts

1. Heat oven to 350ºF.

2. In a large bowl, stir butter, brown sugar, vanilla, and egg yolk until well mixed. Stir in flour and salt. Press dough into 13x9 in. pan.

3. Bake 25-30 minutes or until very light brown. Immediately spread chocolate over hot crust. Let stand about 5 minutes or until soft {or if you're impatient like me- pop the pan into the oven after it's been turned off}; spread evenly. Sprinkle with nuts. Cool 30 minutes in pan on wire rack. 

Quick Tip: I would suggest cutting the bars right out of the oven...
Because when I took mine out of the fridge and tried to cut them it was NOT easy! 
{Don't worry- they're toffee bars... They're supposed to be hard!}

Guest Post {Lindsey}

Bonjour darlings! I'm Lindsey from Sprinkles of My Life. :)


First of all, I'd like to say thanks to Sophie who graciously allowed me to guestpost here today!!! :) We have been emailing for a while, and she is such a sweetheart. <3 I think it's so cool how her and her family are serving Christ over in Nambia, Africa! I would like to do that sometime. :D

But...on to my post.

We didn't really come up with a set topic for me to post about, so I'll just talk a little about me and my blog! 

So I'm Lindsey. A 15 year old homeschooled freshman in highschool. I am also a...passionate singer, observant photographer, letter writer, cupcake baker, eater of desserts, 9th year piano student, and LOVER of my Lord and Savior, Jesus Christ. <3 He is the whole reason I am here today and I thank Him for creating me and loving me just the way I am. :)

Hopefully you know by now that I have a blog. ;D hehe. I regularly blog at Sprinkles of My Life, and enjoy every bit of the blogger world! Making new friends (like Sophie ;), creating fun and unique blog posts, reading my favorite blogs, blog hopping and entering giveaways are just a few of the very many things I do in the blogging world. Chewy Coconut Lime Sugar Cookies


These were THE PERFECT cookies! They were soft and chewy 
and they tasted very summery- tropical and citrusy!

Chewy Coconut Lime Sugar Cookies
2 3/4 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 c. butter, softened
1 1/2 c. sugar
1 egg
1/2 tsp. vanilla
zest of one large lime, finely minced
3 tbsp. lime juice {freshly squeezed is the best!}
1/2 c. unsweetened toasted coconut
1/2 c. sugar for rolling cookies

 Preheat oven to 350ºF. Line cookie sheets with parchment paper or cooking spray.

 In a small bowl, stir dry ingredients.

 Beat butter and sugar until fluffy.

Beat in egg, vanilla, and lime juice and zest. 

Gradually blend in the dry ingredients and toasted coconut.

Roll rounded spoonfuls of dough into balls and roll in sugar.

Bake 8-10 minutes or until lightly browned.

White Chocolate Cheesecake





I made this cheesecake {my first one, actually!} for our Easter dinner... It turned out
WAY better than I expected! The crust was done perfectly- nice and buttery! And the 
cheesecake was fluffy and creamy! DEEEEEEE-LICIOUS!!!

White Chocolate Cheesecake
Crust: 2 c. finely chopped cookies/wafers/biscuits{-whatever you wanna call them! I used coconut tea biscuits}
1/2 c. butter, melted

Preheat oven to 350ºF.
Mix together and press into pie pan. 
Bake for 10-15 minutes.

2 packages {8 oz. each} cream cheese, softened
1/2 c. sugat
1/2 tsp. vanilla
2 eggs
1 white chocolate bar. chopped and divided

Beat cream cheese, sugar, and vanilla in large bowl with electric mixer, on medium speed until well blended. 

Add eggs; mix just until blended. Stir in half of the chopped white chocolate.

Pour into crust. Bake 35 minutes or until center is almost set. 

Top it off with the rest of the white chocolate! Enjoy!

Homemade Graham Crackers



Homemade Graham Crackers
2 c. whole wheat flour
1 tsp. cinnamon
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 c. butter, melted
1/2 c. honey

Mix dry ingredients and set aside.

In a separate bowl, mix melted butter and honey.

Add honey/butter mixture to dry ingredients; stir until combined.

Drop mixture onto cookie sheet and roll out, making sure the edges reach the sides of the cookie sheet.

Bake for 8-10 minutes at 400ºF, cut quickly once out of the oven.

{I poked holes in the top with a fork just for looks... :)
 And I also topped with a little bit of cinnamon sugar!}

I can't wait to share some recipes with you this week! We're having a couple people staying here a few days this week and my parents are also having meetings... You know what that means? I get to bake lots and lots of yummy stuff! :)

Jumbo Oatmeal Peanut Butter Cookies {guest post}

I love it, and I think Sophia is pretty darn talented!
I've loved getting to know her a little, and 
I can tell we have a lot in common in the dessert area.  We both love them!

And...I love, love, love Chocolate Chip Cookies. 
 I love making them and I love eating them, and so do my kids!  
So, I feel like sometimes I get into a cookie rut.  
(Which is okay with me, I'm not complaining, or anything!)  
But, I like this recipe because it's still an 
awesomely delicious Chocolate Chip Cookie,
 but even better, with oatmeal and peanut butter.  
Sometimes I like to live dangerously...what can I say?

Jumbo Oatmeal Peanut Butter Cookies

Ingredients:
3/4 cup margarine
1/2 cup peanut butter
1 cup sugar
1 cup brown sugar
2 eggs
1/4 cup milk
1 tsp vanilla
2 cups flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 1/2 cups oatmeal
2 cups chocolate chips

Instructions:
Cream margarine, peanut butter, brown sugar, and sugar.  Add eggs, milk, and vanilla and mix well.  Gradually add the flour, baking soda, salt, and cinnamon.  Stir in the oatmeal and chocolate chips.  Drop large spoonfuls of dough onto ungreased cookie sheet.  Bake at 375 for 10 minutes.

Chocolate Chunk Cookies



So this morning I woke up and I had another follower! Which means... I already have 40 followers! 
My day has already been made! That was quick! ha ha ha:)

Chocolate Chunk Cookies
1 c. butter
1 c. light brown sugar
1/2 c. granulated sugar
2 tsp. vanilla
2 eggs
2 c. AP flour
1 tsp. baking soda
1 tsp. salt
1 1/2 c. chopped walnuts {optional}
1 1/2 c. chocolate chunks

Preheat the oven to 350 degrees.

Cream the butter and two sugars until light and fluffy in the bowl of an electric mixer fitted with the paddle attachment. Add the vanilla, then the eggs, one at a time, and mix well. Sift together the flour, baking soda, and salt and add to the butter with the mixer on low speed, mixing only until combined. Fold in the walnuts and chocolate chunks.

Drop the dough on a baking sheet lined with parchment paper, using a 1 3/4-inch-diameter ice cream scoop or a rounded tablespoon. Dampen your hands and flatten the dough slightly. Bake for exactly 15 minutes (the cookies will seem underdone). Remove from the oven and let cool slightly on the pan, then transfer to a wire rack to cool completely.

Let's Link Up! {FEATURE TIME!}



Insert me doing my happy dance! I'm SO excited right now I could SCREAM!!! Because LOOK! There's my beloved pictures! Which means I have some catching up to do!

 I'm not going to bore you with the details, but I went on Picasa {which is where all the blog photos are kept} and tried to delete some hoping it would make more room... I totally forgot that it warned me it could take up to 24 hours to notice they were deleted! All I needed was some patience I guess. :)
