A peek into my new room!

I did my best to go with a "vintage-y" type theme... 







I'm in love with this rug!

Please meet my new best friend Coconut Lip Butter!
I got it at the Body Shop in Windhoek last week. I think they have
that store at home although I've never been in it. 

hehehe:)

My closet! Fancy, I know! ;) You can't see the inside
yet because it was super messy when I took the pictures!
Maybe some other time though!!!

Congo Bars


AHHH these were so good! 
Pure carmel-y, chewy, chocolate-y
goodness! :) 


Congo Bars Recipe:

2 3/4 c. all purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
2/3 c. butter, softened
2 c. brown sugar
3 eggs
1 tsp. vanilla
1 package milk chocolate chips
1 c. chopped pecans (optional)

Preheat oven to 350 degrees. Sift flour, baking powder and salt in a large bowl. Set aside. Combine butter and sugar using a mixer until blended. Add eggs, one at a time to sugar mixture, mixing on low in between each addition. Add vanilla and mix. Add flour and mix until combined. Stir in chips and then pecans.

Coat a 9x13 pan with non-stick spray and spread batter evenly into dish.

Bake at 350 degrees for 30 minutes or until top is golden brown. Make sure you don’t over bake.

Happy Friday! {randomness and March Recipe Round-Up!}

Hi everyone! 

It's Friday!!!! Time to celebrate! haha :) 
I hope y'all had a great week! I know I have! 

Also, I wanted to share with you something... 
BECAUSE
today is a very special day for me. 3 years ago from THIS DAY,
my life was changed. Why you may ask? Well let me tell you! 
I was diagnosed with Type 1 Diabetes. I remember I had lost
about 25 lbs. in a month while I still ate a lot! So I was brought to
the doctor, and they did some tests, and then I was told I had diabetes
and I had to go to Children's Hospital downtown Minneapolis 
to get things figured out. Let me tell you, those were
the worst 4 days of my life! But no worries! I have things all under
control now... 
If I could go back in time would I be "un-diagnosed"???
Actually, as surprising as it sounds, NOPE!
I got stronger physically, emotionally, and spiritually through the whole thing!
I learned how to eat better, give myself injections {scary I know!}, but
I also grew up in my faith, learning to depend on God for everything... 
The big things and even the teeny-tiny things!
I thought this was funny- like the other night I was praying
my brains out for more followers, and more links for the party...
The next morning when I woke up I had 2 more followers and links 
to the party! HOW AWESOME IS THAT?! Very. 
I also get asked this VERY OFTEN so I'm just going to answer it for
you. Yes I can eat sugar. 
Obviously... Have you seen my blog?! I LOVE THAT STUFF!!;)

I'm working on some Top-Secret blog things I'm super-duper
excited to share with you whenever they're done! EEK! 
I wanted to let you know my link party numero uno is extended
until April 4th {my 14th birthday!!!} so you have some

I'm a busy-bee!

Hey guys! Or shall I say "ladies"! 
We went to the capital of Namibia yesterday/today 
and shopped with some of my birthday money! 
I got some ADORABLE stuff! I re-did my room... 
*hint: you know I love my vintage-y stuff! ;)
And I also got some pretty fun clothes! 
I'm super excited to post all about with some pictures too! :)

But I also wanted to warm y'all I'm probably not
going to be posting as much... I'm trying to cut down on 
my internet use and also I'm preparing three guest posts. 
{I can't wait to share them with you!!!}

I want to thank everyone who's voted on my poll
and commented! I've gotten some very sweet comments
from my followers and they MAKE MY DAY! 
Since I've only gotten 5 links for the link party
I'm going to check and see if I can extend the time a little

Thick and Chewy Oatmeal Raisin Cookies





    My cookies turned out a little too over done 
    {I'm still gettin' used to our new oven... It's ancient.}
    and I added some peanuts too! They were a perfect
    combination of chewy and crunchy and sweet and salty! 
    YUMMM!


    Thick and Chewy Oatmeal Cookies 
    From Lovin' From the Oven




    1/2 c. {1 stick} butter
    1/2 c. packed brown sugar
    1 egg
    3/4 tsp. vanilla
    3/4 c. flour
    1/2 tsp. baking soda
    1/4 tsp. baking powder
    1 1/2 tsp. cinnamon
    1/4 tsp. salt
    1 1/2 c. oats
    1/2-3/4 c. raisins
    1/2 c. chopped walnuts {optional}


    Preheat oven to 350ºF 
    In a large bowl, beat butter and sugar until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon, and salt; mix well. Add oats, raisins, {and nuts if using them}; mix well.

    Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
    Bake 10 to 12 minutes or until light golden brown. Cool for 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

    "Simplest Homemade Fudgey Brownies!"







    Is your mouth watering yet?
    Yah, that's what I thought! ;)
    I made these for desert tonight, because
    we had a friend over for dinner and had a "brye"... {I'm not sure if that's how you spell it.}
    Anyways, a brye is the African version of a BBQ- Meats, salads, bread, etc. 
    We've been having one almost every night! haha :) 
    I'm super psyched for Wednesday BECAUSE we're going
    to the capital and my brother and I are going to spend
    our birthday money at the "mall"... The mall there actually
    is pretty nice! It has lots of good stores, a movie theatre, some restaurants
    and cafes, and stuff like that. Just like a normal mall pretty much!
    What's on the shopping list?
    CLOTHES! I brought a lot of running shorts, baggy shirts,
    sweatshirts- nothing very impressive. SOOOO I wanted to 
    find some jean shorts, cute shirts, dresses, and skirts. 

    ONTO THE GOOD STUFF!!!!! :)

    Enjoy this yummy  recipe from Good Life Eats!
    Ingredients:
    12 {1 1/2 sticks} tablespoons Salted Butter
    1 1/2 cups granulated sugar
    2/3 cup cocoa powder
    1/2 - 1 teaspoon pure vanilla, orange, or peppermint extract, optional
    3 large eggs
    1 cup flour
    A heaping 1/2 cup chocolate chunks, optional {for me, NECESSARY!!!}

    Directions:
    Preheat oven to 350 degrees F. Line an 8x8 or 9x9 square baking pan with parchment paper. Set aside.
    Set a medium sized saucepan over medium-high heat and melt the butter. Next, add the granulated sugar and your choice extract. Stir well. Remove pan from heat and whisk in the cocoa powder.
    In a separate bowl, lightly beat the eggs. Pour the chocolate mixture into the bowl and whisk in with the eggs until well combined. Stir in the flour and chocolate chunks, but do not beat.
    Pour batter into the previously prepared baking pan. Bake at 350 degrees F for 30-40 minutes. Cool completely, or if you’re impatient like me – at least 15 minutes, on a wire rack.
    Remove parchment paper (with brownies) from the pan. Peel away the parchment paper and cut the brownies into serving size pieces and store in an airtight container for up to 3 days – if they last that long!
