Jumbo Oatmeal Peanut Butter Cookies {guest post}

Hi everyone! We have a special guest today! 
I've gotten to know Kristin a little bit over the last few weeks, while we've been putting together recipes for each other! She's really sweet and I love all the yummy recipes she shares on her blog! Be sure to check it out and leave some bloggin' love! :)

I'm so happy to be here today doing a guest post!
Isn't this a fun, cute blog?
I love it, and I think Sophia is pretty darn talented!
I've loved getting to know her a little, and 
I can tell we have a lot in common in the dessert area.  We both love them!

And...I love, love, love Chocolate Chip Cookies. 
 I love making them and I love eating them, and so do my kids!  
So, I feel like sometimes I get into a cookie rut.  
(Which is okay with me, I'm not complaining, or anything!)  
But, I like this recipe because it's still an 
awesomely delicious Chocolate Chip Cookie,
 but even better, with oatmeal and peanut butter.  
Sometimes I like to live dangerously...what can I say?

Jumbo Oatmeal Peanut Butter Cookies

Ingredients:
3/4 cup margarine
1/2 cup peanut butter
1 cup sugar
1 cup brown sugar
2 eggs
1/4 cup milk
1 tsp vanilla
2 cups flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 1/2 cups oatmeal
2 cups chocolate chips

Instructions:
Cream margarine, peanut butter, brown sugar, and sugar.  Add eggs, milk, and vanilla and mix well.  Gradually add the flour, baking soda, salt, and cinnamon.  Stir in the oatmeal and chocolate chips.  Drop large spoonfuls of dough onto ungreased cookie sheet.  Bake at 375 for 10 minutes.

Chocolate Chunk Cookies



So this morning I woke up and I had another follower! Which means... I already have 40 followers! 
My day has already been made! That was quick! ha ha ha:) 
If I wasn't in Namibia right now, I would be having a giveaway at the 50 follower mark. 
Maybe when I get back in 2 years! hahaha:)

Chocolate Chunk Cookies
1 c. butter
1 c. light brown sugar
1/2 c. granulated sugar
2 tsp. vanilla
2 eggs
2 c. AP flour
1 tsp. baking soda
1 tsp. salt
1 1/2 c. chopped walnuts {optional}
1 1/2 c. chocolate chunks

Preheat the oven to 350 degrees.

Cream the butter and two sugars until light and fluffy in the bowl of an electric mixer fitted with the paddle attachment. Add the vanilla, then the eggs, one at a time, and mix well. Sift together the flour, baking soda, and salt and add to the butter with the mixer on low speed, mixing only until combined. Fold in the walnuts and chocolate chunks.

Drop the dough on a baking sheet lined with parchment paper, using a 1 3/4-inch-diameter ice cream scoop or a rounded tablespoon. Dampen your hands and flatten the dough slightly. Bake for exactly 15 minutes (the cookies will seem underdone). Remove from the oven and let cool slightly on the pan, then transfer to a wire rack to cool completely.

Let's Link Up! {FEATURE TIME!}



Insert me doing my happy dance! I'm SO excited right now I could SCREAM!!! Because LOOK! There's my beloved pictures! Which means I have some catching up to do!

 I'm not going to bore you with the details, but I went on Picasa {which is where all the blog photos are kept} and tried to delete some hoping it would make more room... I totally forgot that it warned me it could take up to 24 hours to notice they were deleted! All I needed was some patience I guess. :)

Bummer.

Hi everyone! Well I have some bad news. 
As I was trying to upload pictures to a post,
it said that I ran out of storage space and I have to purchase more storage. 
The only issue is,we don't have a way to pay for that right now, 
and until we do, I shall be taking a break from posting {besides guest posts and link parties}...
I don't know when it'll be fixed, but let's be praying it 
will be soon! It looks like I'll have a lot of posting to catch up on! Thanks for understanding!

Crazy Cookies!




MMMMM. I loved these! My mom loved them too! She said they
were the best cookies I've ever made! Will you take her word for it?! ;)
They had a little bit of everything in them!

Crazy Cookies
1 c. AP flour
1 tsp. baking soda
1/4 tsp. salt
1 stick butter
1/2 c. creamy peanut butter
1/2 c. granulated sugar
1/3 c. light brown sugar
1/2 tsp. vanilla
1 3gg
1/2 c. rolled oats
1/2 chocolate bar {chopped up! ... or not. ha ha ha :)}
1/2 c. shredded coconut
1 c. peanuts

1. Preheat oven to 350ºF. Spray two cookie sheets; set aside.

2. Whisk together flour, baking soda, and salt; set aside.

3. On med. speed, cream together butter, peanut butter, sugar, brown sugar, vanilla. Add egg and beat to combine. On low speed, gradually add flour until combined. Stir in oats, chocolate, coconut, and peanuts. 

3. Use a large cookie scoop and drop onto prepared baking sheets about 2 in. apart. Bake for 8-10 minutes, or until cookies are lightly golden around the edges. 

4. Let cool completely on cookie sheet. ENJOY! :)

Coffee Cake In-A-Cup




This stuff is SO good! This was from the second time I made it...
The first time I used half an egg and I liked it WAY better. This time I 
used a whole egg and as you might be able to tell from the pictures, it was
a little to eggy for my liking! 
Other than that, it's cakey, cinnamon-sugary, crunchy goodness! 

Coffee Cake In-A-Cup
{Mix everything together in a coffee cup}
1 tbsp. melted butter
2 tbsp. sugar
1/2 egg
2 tbsp. sour cream
a few drops of vanilla
1/4 c. flour
1/8 tsp. baking powder

Mix it all up!

If you want some crumb topping... 
{You know you do!!!} 

1 tbsp. butter
2 tbsp. flour
1 tbsp. brown sugar
1 tsp. cinnamon

Smoosh it up and add it to the cup.
Microwave for about 1 minute and add ten second increments to your liking...
ENJOY!!! :)

I got it at the Body Shop in Windhoek last week. I think they have
that store at home although I've never been in it. 

hehehe:)

My closet! Fancy, I know! ;) You can't see the inside
yet because it was super messy when I took the pictures!
Maybe some other time though!!!
