Recipes: EXTRA Chewy Oatmeal Raisin Cookies

On this beautiful day,(yes, I think rainy weather is beautiful) I thought I should make one of my favorite kinds of cookies, chewy oatmeal raisin cookies... And of course share them with the blogger world... but they turned out VERY VERY chewy, almost a little TOO chewy, and about as thin as paper. Though they may have not looked very appealing, they sure did taste AMAZING! (: 


Chewy Oatmeal Raisin Cookies


Ingredients:
3/4 c. softened butter
3/4 c. white sugar
3/4 c. packed light brown sugar
2 eggs
1 tsp. vanilla extract
1 1/4 c. all-purpose flour
1 tsp. baking soda
3/4 tsp. ground cinnamon (optional)
1/2 tsp. salt
2 3/4 c. rolled oats
1 c. raisins


Directions:
1. Preheat oven to 375ºF
2. In large bowl, cream together butter, white sugar, and brown sugar until smooth. Beat in eggs and vanilla until fluffy. Stir together flour, baking soda, cinnamon, and salt. Gradually beat into butter mixture. Stir in oats and raisins. Drop by teaspoonfuls onto an ungreased cookie sheet.
3. Bake 8-10 minutes in the preheated oven, or until golden brown. Cool slightly, remove from sheet to wire cooling rack. Cool completely. Enjoy!
