{skinny} peanut butter swirl brownies


Oh yah. I went there. Er wait… She went there. Yup. Never thought you'd hear brownies and skinny in the same sentence? Ha! These brownies are so fudgey and moist! You would never in a million gazillion years think that they're healthy or remotely close to it. 
 They're dang-er-ous. Actually they're not, but they are. I hope that makes sense.


This afternoon I was feeling like something chocolatey and peanut buttery. I was
debating making a single serving cake, but decided on the negative. BECAUSEEEEEEE those
little bundles of happiness still have their "not-super-good-for-you" side. A couple days ago, Sally posted this recipe and the instant I saw it I was like "OOH AHH!" I had to make them. Emphasis on the had. BESIDES they're healthy! {wow that sounds weird.} So it shouldn't matter that I ate about 3 of them? 


{skinny} peanut butter swirl brownies

3/4 cup creamy peanut butter
6 oz. low fat vanilla yogurt (could use fat free.. I used greek yogurt)
1/4 cup skim milk (or almond/soy milk)
1 egg
1/4 tsp salt (I used sea salt)
1 tsp baking powder
1 cup sugar (or Splenda)
1/2 cup cocoa powder
1/2 cup old-fashioned rolled oats (not quick oats)

Instructions
Preheat oven to 350F. Spray a 8×8 inch pan with non-stick cooking spray. Set aside.
Place all of the ingredients except for the peanut butter into a blender. (Yes, a blender!) For easier blending, place the liquid ingredients into the blender first. Blend until mix is smooth and oats are ground up. *You will have to stop the blender and scrape down the sides a few times.
Pour batter into prepared baking dish.
Microwave peanut butter for about 30 seconds. Drop melted peanut butter by spoonfuls onto the batter, swirling gently with a knife to create a marbled effect. (Try not to overmix!)
Bake for 20-25 minutes or until brownies begin to pull away from the sides of the pan. Brownies will be extra fudgy, so be sure to wait until COMPLETELY cooled –

  4. These look delicious, going to have to try this recipe. Thanks for sharing. I like your new blog design but I am having a little hard time reading the yellow color font. Other than that it looks really good. I have to ask where did you learn to take such good pictures, I always like how they come out

    1. Thanks so much for letting me know! I'll see what I can do(; For photography… Well. I just mess around with my camera and online editing websites and BOOMSKY- my photos improved. Although the real key is practice, practice, practice!
