Peanut Butter Pretzel Chocolate Chunk Cookies


Ok so I totally forgot about these cookies. I shared these over at Scattered Thoughts of a Crafty Mom like… way long ago and forgot to post them here! Which is great because I was feeling guilty about not posting since Tuesday

Hopefully I'll whip something up later this weekend to share with you.  I've been feeling crappy all week though and my diet the past few days has consisted of lemon iced tea and rice cakes. Yum, I know. 

The worst part is, I haven't been able to run at all… I actually haven't ran since MONDAYYYYYY! And I'm kinda sorta going nuts. I feel like such a bum! Because my throat is so sore, I'd probably be weezing like nobody's business and then eventually pass out or something. And that wouldn't be very fun. 

So instead, I've been lounging around in yoga pants and oversized t-shirts, reading and watching Food Network. I haven't worn jeans. or makeup. since…. last Friday. World record, right there. 


Anyways. These cookies are SO great! 

Just your basic peanut butter cookies-with a twist of course… With some added crunch from chopped up pretzels and sweet chunks of chocolate. The perfect combination of sweet and salty, indeed!

I made these for the opening ceremony of the Olympics… and everyone LOVED them. I think only one wasn't devoured after the party was over. 





Peanut Butter Pretzel Chocolate Chunk Cookies

1/2 c. sugar
1/2 c. brown sugar
3/4 c. butter
3/4 c. peanut butter
1 egg
1 1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. chocolate chunks {or chocolate chips}
1 c. pretzels, crushed

Preheat oven to 350ºF. Beat the butter until creamy. Add in the sugars, peanut butter, and egg. Mix in the flour, baking soda, baking powder and salt. Slowly add in the chocolate chunks and crushed pretzels. Shape dough into 1 1/4 inch balls. Place about 3 inches apart on an ungreased cookie sheet. Flatten in a crisscross pattern with a fork. Baked until light brown- about 9-10 minutes. Cool on baking sheets for a minutes; transfer to a rack to cool completely.
