{skinny} banana bread


 Banana bread is DEFINITELY one of my favorite things to bake. And there's so many different ways to make it.

Sally has done some crazy things with this blank canvas. She recently made some White Chocolate Chip Mango Banana Bread. YUM? Yum.

I made this yesterday because my friends were coming over. You bet your bottom dollar, we were able to scarf down this whole thing. But it's "healthy" so it shouldn't count.

I used my basic banana bread recipe from an old church cookbook we had in the states. I LOVE those old cookbooks- they always have the best tried and true recipes. I've been making this banana bread for ages. But today, I switched it up to make it a teensy bit healthier. Using some honey for sweetness, yogurt for moistness, and wheat flour just 'cause.

Also. Have I mentioned how much I hate our oven? If you know how the outside was black and the inside totally raw, please tell me. Of course when I found it I somehow got it back in the pan and got it cooked through.


{skinny} banana bread

1/4 c. butter
2 eggs
1/2 c. sugar
1/4 c. honey
3/4 tsp. vanilla
1/2 c. plain yogurt {I used Greek}
3 mashed bananas {the browner the better}
1 1/2 c. all purpose flour
3/4 c. wheat flour
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda

Preheat oven to 350ºF. Grease a loaf pan. In a large mixing bowl, beat the butter, eggs, yogurt, sugar, vanilla, and honey. Add in the mashed bananas. Mix in the dry ingredients. Pour the batter into the prepared pan. Bake for about 30-45 minutes or until the outside is golden and a toothpick inserted comes out clean.


So do yourself some good and go make a loaf of heavenliness.
And eat the whole loaf with your friendlies.

  1. Pretty sure if it's not cooked on the inside but burnt on the outside, the oven is too hot? Not a baking connoisseur but maybe....?

  6. hmm, I may just have to try. I have about 7 bananas sitting in my freezer (the ones i don't quite get to for breakfasts). I typically make my moms banana bread but this may just have to happen tonight. Thanks for the recipe. Now to get yogurt.

    If you don't already, get an oven thermometer. The kind that hangs on your rack. I had to get one because I was having similar problems or things would just turn out over done. I have a gas oven so the temperature isn't always regulated. Since I have gotten the thermometer (about $3-$5) It's been a bit easier to bake. :) Happy baking!

  8. Can these really be called healthy though with the amount of sugar and honey in them? This isn't a criticism, but the health movement here in Australia is away from sugar and even natural products like honey that are high in sugar. I would love to try these as the recipe certainly does look nice and, despite comment, is still lower in sugar than other banana bread recipes.
