Peanut Butter Mug Cake

G'day! I feel like talking {EHEEMMMMMM. Typing.} in an Australian accent. Don't judge. :) 

Thankfully, I'm feeling so much better today. Well there's still a little bit of a tummy-funk goin' on down there, but other than that, muchos bueno! {which is much better in spanish…} 

Australian and Spanish? Austranish. 

Ok. Enough 'a that. I was a guest over at White Lights on Wednesday last week and shared this goodness. 

Peanut butter. Cake. Made in like 3 minutes. I really don't think I need to say more, do I? Nope. 




Peanut Butter Mug Cake
recipe from//Kirbie's Cravings

4 tablespoons all purpose flour
4 tablespoons white granulated sugar
1/4 tsp baking powder
1 egg
3 tablespoons peanut butter
3 tablespoons milk
3 tablespoons vegetable oil

Combine all ingredients in an oversized coffee mug. Whisk well with a small whisk until smooth. Microwave on high for 1 1/2 minutes and then take it out to check to see if it is done. If not, continue to microwave in thirty second intervals. Mine was done at 2 minutes. You don’t want to overcook it or it will become rubbery. You can also make this into two smaller-sized mugs. You can mix the batter all in one mug and then pour half into another mug. Make sure you cook each one individually.

I’m so glad Sophie let me join you today. I love her blog – she is really inspiring to so many people. And I love her recipes! Especially her single serve desserts (who wouldn’t love a single serving of deep dish chocolate chip cookie? YUM!!)

If there is one thing I love, it’s chocolate.  Most of the time, if I have to choose between chocolate and something else, chocolate wins.  One of my favorite ways to have chocolate is a cup full of steamy hot chocolate on a cold winter night.  But it’s summer now and that won’t do.  So, today I’m going to share with you one of my new favorite summer dessert drinks. Frozen Hot Chocolate!

About a month ago, I took my kids to Dairy Queen for lunch.  I noticed that they had a frozen hot chocolate on the menu, so I had to try it.  It was yummy!  So good that I almost wished I never discovered it. I knew that my wallet was doomed to shrink to nothing by the end of the summer just from buying frozen hot chocolates.  That would never do, so I sought out to make an equally wonderful version at home.  In my opinion, this is way better than the DQ version. This recipe is really pretty fast and easy.  And a huge hit with my kids!

Here’s what you need:

frozen hot chocolate ingredients

3 squares of bakers chocolate (or 3 oz of chocolate chips)
2 teaspoons of cocoa (I haven’t tried it, but I’m sure you could substitute hot chocolate mix)
1/4 cup of sugar
2 cups of milk
About 3–4 cups of ice
{This recipe serves about 4-5 people}

First, melt the chocolate squares in the milk on low heat. When the chocolate starts to melt, add the sugar and stir well.

After all of the chocolate is melted and it looks smooth, remove from the heat and let it cool down. 

After it’s cooled off, pour the chocolate and milk into a blender. Add the ice and cocoa powder and blend.

And that’s it! Super easy and super delicious! It’s a perfect summer time treat without heating up the house.  And now I can enjoy the yumminess of hot chocolate all year long!

Strawberry Cheesecake Ice Cream


I felt so horrible today. I think it was that 24 hour flu-ish thing… At least I hope it's that and not malaria or something else.

I swear I probably got about an hour of sleep total last night with all of the horrible tummy aches, chills, and what not. So when I woke up {or "decided to get out of bed"} I took a hot bath and crawled back into bed, read as much as my head could manage… which by the way was like two sentences- my head throbbed, and then I fell back asleep.

When I woke up from my nap I had a fever of 101 but it eventually went back down. So basically I spent the whole day in bed watching 30 Rock and eating crackers… FUN! Not.

 I remembered I had this ice cream in the freezer and decided to give it a shot… Hoping my tummy wouldn't get mad. It was SO good! Super creamy and thick with chunk-idy-chunks of strawberries, cream cheese, and cookie goodness.

I love that I can make ice cream without using a machine… My ice-creamy brain is thinking of a zillion different variations. This shtuff is so good especially considering that everything is just plopped in a blender and frozen…

BOOM! You have yourself a yummy summer treat right there. Oh yes you do.


Strawberry Cheesecake Ice Cream

1 can sweetened condensed milk
1 8 oz. package cream cheese
2 c. frozen strawberries {or the fresh stuff}
1/3 c. cream
1 1/2 c. tea biscuits {or graham crackers}

Put the sweetened condensed milk, cream cheese, and cream in a blender until smooth. Add the tea biscuits and strawberries. Blend until everything is in chunks. Pour into a plastic container and freeze.

Life and Lemon Loaves.


I'm HOOOOOOOOOOOOOOOOME! Did ya miss me? :) 
In case you didn't know {ha.} we were in Victoria Falls since Friday. It was
such a blast! I went zip-lining over the Zambizee river {300 feet above water}…
I think I'm going crazy in the head. But it was great! 
We were planning on getting home today, but we decided to drive ALL DAY 
yesterday and got home last night. 12 hours in a car with nothing to look at and 
DEFINITELY no McDonald's or Starbucks to stop at, got ooberly boring. I slept pretty 
much the whole day {I'm seriously not kidding.} and had like 3 cans of caffeine pop… 
So when we got home I unloaded and put away all my stuff, took a nice hot bath, and 
watched whatever was on the Food Network. A good life, I have. :) 



Is this dog not the cutest thing in the whole dang world? His name is Tauna. Tauna and I met
at the cute little cottage we were staying at… He reminded me so much of our dog
at home. We were like best friends basically… Even though we "hung out" for about 3 days. 
When I went to the kitchen in my jam-jams to get some tea and play games, he'd
come and plop down right next to me. What a gentle giant! 


ANYYYYYYways… I made a Lemon Poppyseed Loaf today, but it didn't turn out. 
The outside looked perfectly brown and done, and when I inserted a toothpick, it came
 out clean. But when I dumped it out EVERYTHING fell apart and all the wonderful 
goodness came oozing out. BOO. STUPID STUPID STUPID crapalicious oven! So after 
throwing a kitchen fit and shedding a few irritated-out-of-my-mind tears, I jammed it all back 
in the pan and popped in the oven again. No it was not pretty, but yes, it was delicious. Oh the life of a baker with a pathetic oven. I'm hoping I'll get around to some good baking this weekend… 
Free of oozing loaves and burnt outsides.

If you've ever read my blog, you would know that one of my favorite flavor combinations is chocolate and peanut butter. When I saw a recipe for these oatmeal bars, I knew I had to try them.

These oatmeal bars were such a delicious combination of oats, chocolate, and peanut butter.  These are also pretty easy to make and are so tasty.  I made these when I met up with some friends and they all loved them. I really hope that you try these!

Peanut Butter and Chocolate Oatmeal Bars
(Recipe adapted from Kraft Food and Family Magazine, Spring 2012)

1 cup butter, softened
1 1/2 cups packed brown sugar
2 cups old-fashioned oats
2 cups flour
1 teaspoon baking soda
1 package (8 squares) of semi-sweet chocolate (can also use unsweetened chocolate)
3/4 cup creamy peanut butter

1.  Preheat the oven to 350 degrees.

2.  Beat the butter and brown sugar in a large bowl with a mixer until the mixture is combined.  In a separate bowl combine the oats, flour and baking soda.  then add that mixture into the butter and brown sugar mixture. 

3.  Press 3 cups of the mixture into the bottom of a 13x9 inch greased pan.

4.  Microwave the chocolate for 45 seconds, and then in 10 second increments until melted.  Stir in the peanut butter.  Carefully spread the chocolate and peanut butter over the crust.  Then sprinkle with the remaining oat mixture.  

5.  Bake for 22-25 minutes or until the edges are golden brown.

So today, I went out with a friend for her birthday because it's tomorrow and we're kinda sorta leaving for Victoria Falls tomorrow… Do you think it's a little weird that I had coffee and those leftover pretzel butterscotch blondies from yesterday and I had coffee and cake for lunch…Yeesh.

I decided to email Julie and we chatted back and forth {pretty much all day. I kid you not.} about

Anyways.

Pretzel Butterscotch Blondies


 I've been feeling a little poopy this week and we're going to Victoria Falls on Friday… So I really didn't think I'd get to baking this week. 

But luckily today when I woke up I felt geeeeeeeeeeer-eat {name that commercial} and went for a nice walk. 

Stupid dogs. Seriously! People don't think it's a little dumb to just leave their gate wide open so there dogs can scare the bee-gee-bies out of a cute little pedestrian like me? 
Goodness gracious. 


Anyways. Like I was saying I felt better today so I figured why the heck not bake something?

 I've had 2 bags of butterscotch chips in my baking cupboard for at least a month or two since we got our first care package… I think I got so used to not having any, I had no idea what to do with them. But like always, sweet and salty goes together like… Peanut butter and jelly? 

So why not throw some pretzels in the batter and BOOM! A delicious bar cookie was born. THE BEST bar cookie actually. You're very welcome. 

I suggest making these right now and anyone who sinks their pearly whites into them will love you forever… I kid you not. Do I kid? Noooooooooooooooooooo. 


These bars were so soft and fluffy they were like a golden pillow! The sweetness of the butterscotch and the saltiness of the pretzels and sea salt are a combo-a-la-perfecto! 

Pretzel Butterscotch Brownies
{a Sophie original}

2 1/4 c. flour
1 tsp. baking soda
1 tsp. sea salt
 {or regular salt… Whatever floats your boat.}
1 c. butter
3/4 c. sugar
3/4 c. brown sugar
1 tsp. vanilla
2 eggs
1 1/2 c. butterscotch chips
2 c. pretzels, chopped

Preheat your oven to 350ºF. Beat the butter, sugars, vanilla, and eggs. Mix in the flour, baking soda, and salt. Fold in the butterscotch chips and 1 1/2 c. of the pretzels. Press the batter into a greased 9x9 baking pan. Top it off with the rest of the chopped pretzels. Bake for 10-15 minutes or until the edges are golden brown. A little sign to know when they're done is when you can smell all the goodness comin' from the oven! Enjoy! :)

Olive Garden Breadsticks

GUYS! I have a secret! Well really, it's not a secret. I. found. a delicious. breadsticks. recipe. It's like CRAZY good! And easy-peasy lemon squeazy. I made them for our Father's Day dinner and everyone loved them! They really do taste like the real thanggggggggg! They may not LOOK like it, but my golly they're delicious. Seriously people. You should make these. And don't let the yeast scare you! They're a breeze to whip up! 


Olive Garden Breadsticks
recipe from//Full Bellies, Happy Kids

 1/2 cups warm water (between 110 - 120 degrees F)
1 package active dry yeast
4 1/4 cups all-purpose flour
2 tablespoons unsalted butter, melted
2 tablespoons sugar
1 tablespoon salt 

In a large bowl, dissolve sugar and yeast in warm water and allow to sit for 10 minutes, covered. Mixture should be frothy. In separate bowl, combine flour and salt. Add to yeast mixture. Add melted butter. Mix with paddle attachment of stand mixer or wooden spoon until fully combined. Knead dough for a few minutes just until dough is smooth. Do not over knead! Grease a cookie sheet. Pull off pieces of dough and roll out into strips. Cover the dough and let sit in a warm place for 45 minutes to an hour.
Preheat your oven to 400 degrees F and once heated, pop in the bread sticks.

single serving deep dish chocolate chip cookies

Here it is. Yet another single serving wonder. GEEEESH. I can't get enough of this stuff. In case you missed my guest post at Angela's Adventures last week, I just had to share it with you! I even have plans to make another single serving something tomorrow!

{single serving} deep dish chocolate chip cookie
recipe from//no. 2 pencil

1 tbsp. butter, melted
1 tbsp. white sugar
1 tbsp. brown sugar
3 drops of vanilla
pinch of salt
1 egg yolk
1/4 c. flour
2 tbsp. chocolate chips 

In a bowl, ix together the butter, sugars, vanilla, and egg yolk. 
Add in the flour and salt. 
Mix until combined.
Add in the chocolate chips. 
Put the dough into a small microwaveable bowl, ramekin, or coffee cup.
Microwave for 40-60 seconds or until the cookie looks done. 
Best served warm… Enjoy!

Chocolate Cupcakes with Salted Caramel Frosting

Ok… So I was thinking about not posting these. BECAUSE I wasn't a huge fan. But the pictures were too good to let them go to waste. Darn you bad African baking ingredients. I think it was the brown sugar that wrecked it for me. When I get brown sugar there's two choices- either like brown colored granulated sugar, or sugar that's basically molasses flavored. And that's what we had at the time. SOOOO… It was more like molasses frosting. EEW. BUT! I can guarantee you these would be SO good if you have normal ingredients unlike yours truly… So here ya go. Give it a shot!

For some reason every time I make cupcakes they don't really turn out well. Is that even legal to be a baker and not be able to make cupcakes? Mehh.


{guess who doesn't have a future in professional cupcake frosting… That's not a job. But still.}


Chocolate Cupcakes
1 stick {1/2 c.} of butter
2 eggs
3/4 c. milk
one box/bag chocolate cake mix
1/3 c. flour
1 tsp. baking powder

Preheat oven to 350ºF. Line a muffin pan with cupcake liners. Set aside. 
Pop the butter in the microwave to soften. Add in the eggs and milk. 
Stir until combined. Mix in the cake mix, flour, and baking powder. 
Scoop the batter evenly into the prepared muffin cups. Bake for 20-25 minutes
or until a toothpick inserted in the middle comes out clean. After the cupcakes have cooled, top with salted caramel frosting. {recipe follows}


Naked cupcakes, what? That's almost as bad as… *shivers* coffee cake without a crumble topping. Let's fix that, shall we? 

Salted Caramel Frosting
Recipe from//Sally's Baking Addiction
1 stick {1/2 c.} butter
1 c. dark brown sugar
1/3 c. heavy cream
1/4 tsp. salt
2/3 c. powdered sugar
Melt butter in a saucepan. Once melted, add brown sugar and heavy cream. Stir constantly over medium hear until sugar is dissolved. Add salt. Allow to bubble for about 1 minute. Remove from heat and allow to cool. {if you're as impatient as me, you sure could put it in the fridge to speed up the process.} Beat in powdered sugar 1 cup at a time, until you reach desired consistency. Pipe or frost cupcakes as desired.

Apple Cinnamon Scones


Today we're going to my brother's soccer tournaments which will go pretty much all morning and into the afternoon. I'm hoping to finish some cupcakes that I started yesterday but wasn't able to finish… Stupid. I'm sure they'll be great with our special little dinner tonight though! And I hope to post them SOOOOON so all of you can drool over them. :)

Anyhoo… Happy Father's Day to all the wonderful dads out there including mine! :) I made these scones last night so we could have them for breakfast today before we ran out the door, popped 'em in the fridge, and baked them this morning. DEEEEE-LICIOUS with chunks of apples and cinnamon in every warm bite. Yum!


Apple Cinnamon Scones
Recipe From//Simply Scratch
YIELD: 8 scones

INGREDIENTS:
2 cups All Purpose Flour, plus more for dusting
1/4 cup Sugar
2 teaspoons Baking Powder
1 teaspoon Cinnamon
1/4 teaspoon Fresh Nutmeg, grated
1/2 teaspoons Baking Soda
1/2 teaspoon Kosher Salt
1 stick {8 tablespoons} Chilled Unsalted Butter
2 Apples {like golden delicious or honeycrisp}, peeled and shredded
1/4 to 1/2 cup Whole Milk, plus more for brushing
1 tablespoon Sugar, for sprinkling

DIRECTIONS:
Preheat oven to 425 degrees and line a sheet pan with parchment paper.

In a large bowl combine the first 7 ingredients. Then cube up the chilled butter and add to the flour mixture. With a pastry cutter{or if you're oh-so sophisticated as me, I will allow you to use a fork. haha}, blend the butter and the flour together until small crumbles form. Add in the shredded apples, stir. Gradually add the whole milk, stirring until the dough forms.

On a lightly floured surface knead the dough 8-10 times before forming into a rectangle. Cut eight wedges and place on prepared pan. Brush with a little milk and sprinkle with sugar.

Bake in your preheated oven for 12-15 minutes or until the edges are lightly golden. Serve warm with butter.

I've been jumping in excitement {not literally. But inside, yes.} to post today's guest blogger! It's Julie from White Lights on Wednesday! She's SO sweet and amazing and her recipes are awesome. I could go on. But really, I love her... In a non-creapy sort of way, that is. You could call us BFFS. As in "Blogging Friends Forever". You betcha! Now, being addicted to Sophie's blog made it really easy for me to decide that I wanted to make cookies today.  The hard part was figuring out which ones to make.  There are so many endless possibilities.  


  
  
Then I remembered a post I saw a while ago.  All I had to do was make a minor adjustment so everything would be perfect for Sophie.  Of course I had to pay a little homage to one of my all time favorite dessert bloggers, Heather.



Chocolate Sprinkle Sandwich Cookies
From SprinkleBakes


Ingredients:
10 1/2 tablespoons unsalted butter, softened
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder  {Heather uses dark cocoa powder}
1/4 teaspoon baking soda
1/8 teaspoon salt
1 egg
1 teaspoon vanilla
1 1/4 cups all-purpose flour
1 cup rainbow jimmies/sprinkles
Twelve 6" to 8" lollipop sticks, optional


Directions:
  1. Line 2 baking sheets with parchment paper (or Sil-Pat); set aside.
  2. In a large bowl, beat butter on medium speed until creamy.  Add sugar, cocoa powder, baking soda, and salt.  Mix until well combined.
  3. Mix in the vanilla and egg.  Scrape the sides of the bowl as needed.  Mix in the flour.  Dough should not be sticky.
  4. Fill a small bowl with sprinkles.
  5. Measure out dough by level tablespoons.  Roll dough into a ball between your palms into a ball.  Roll dough in sprinkles until coated.  {I found it helped to gently drop the dough ball into the sprinkles to press them into the dough.}  Place sprinkle coated ball onto baking sheet.  Repeat with remaining dough.  Place in refrigerator for 30 minutes.
  6. Preheat oven to 375 degrees F.
  7. Bake for 12 minutes.  Cool on baking sheet for 2 minutes.  Remove cookies to wire rack and cool completely.
Filling:
8 tablespoons unsalted butter, softened
1 to 1 1/2 cups powdered sugar
1 teaspoon vanilla

Directions:
  1. Beat butter and powdered sugar in a large bowl with a hand mixer on low speed.  When almost incorporated, add vanilla and beat on high speed until light and fluffy.
  2. Transfer to a piping bag and fill cookies, or fill by spreading frosting on cookies with a small spatula.
Insert lollipop sticks into filling so that cookies stand on their side.  Eat and be happy!



I hope you'll try these cookies out.  They are seriously wonderful.

{skinny} peanut butter swirl brownies


Oh yah. I went there. Er wait… She went there. Yup. Never thought you'd hear brownies and skinny in the same sentence? Ha! These brownies are so fudgey and moist! You would never in a million gazillion years think that they're healthy or remotely close to it. 
 They're dang-er-ous. Actually they're not, but they are. I hope that makes sense.


This afternoon I was feeling like something chocolatey and peanut buttery. I was
debating making a single serving cake, but decided on the negative. BECAUSEEEEEEE those
little bundles of happiness still have their "not-super-good-for-you" side. A couple days ago, Sally posted this recipe and the instant I saw it I was like "OOH AHH!" I had to make them. Emphasis on the had. BESIDES they're healthy! {wow that sounds weird.} So it shouldn't matter that I ate about 3 of them? 


{skinny} peanut butter swirl brownies

3/4 cup creamy peanut butter
6 oz. low fat vanilla yogurt (could use fat free.. I used greek yogurt)
1/4 cup skim milk (or almond/soy milk)
1 egg
1/4 tsp salt (I used sea salt)
1 tsp baking powder
1 cup sugar (or Splenda)
1/2 cup cocoa powder
1/2 cup old-fashioned rolled oats (not quick oats)

Instructions
Preheat oven to 350F. Spray a 8×8 inch pan with non-stick cooking spray. Set aside.
Place all of the ingredients except for the peanut butter into a blender. (Yes, a blender!) For easier blending, place the liquid ingredients into the blender first. Blend until mix is smooth and oats are ground up. *You will have to stop the blender and scrape down the sides a few times.
Pour batter into prepared baking dish.
Microwave peanut butter for about 30 seconds. Drop melted peanut butter by spoonfuls onto the batter, swirling gently with a knife to create a marbled effect. (Try not to overmix!)
Bake for 20-25 minutes or until brownies begin to pull away from the sides of the pan. Brownies will be extra fudgy, so be sure to wait until COMPLETELY cooled –

Red Velvet Mug Cake



I LOVE single serving recipes. Obsession? Almost. Last night I was looking around Pinterest for some more to try out. Sadly, I had eaten enough sweets already. Lame. But I found one I just HAD to try today! Kirbie's Cravings has TONS! They even did a whole series. That being said- I. was. in. heaven. 
And don't you worry! I will be trying MANY more in the upcoming weeks days. :)


While I was making this, I was thinking why red velvet is any different than chocolate cake…
I mean really. It's basically the same thing with a dash of red food coloring. OOOH impressive!
If I added some green coloring to my white cake, would I be a genius? I think yes. :)

The recipe was a little much for just one person in my opinion. I didn't feel like eating a whole mug {notice I broke the rules on that one} of cake. I had a friend coming over to get crafty with so I thought I'd make us a little treat. I may or may not have eaten it all before she even got here… Aren't I a great friend? I know...

Just kidding. Know that if you become my friend though, my baking gets tied in with the deal.

Red Velvet Mug Cake

serves 1-2


For the cake:
4 tbsp flour
4 1/2 tbsp sugar
1/8 tsp baking powder
1 1/2 tbsp unsweetened cocoa powder
3 tbsp oil
3 tbsp buttermilk
1 egg
1/2 tsp red food coloring

For the frosting:
2 tbsp cream cheese
2 tbsp butter
1/2 cup sugar

Directions:
Mix all the ingredients together into an oversized mug using a fork or small whisk until batter is smooth. Cook in microwave for about 1 min 30 seconds. It might need an additional 30 seconds. Be careful not to overcook as batter will become dense and rubbery.

Let cake cool slightly before piping frosting. For frosting, combine all ingredients into a mixing bowl and mix on high speed until light and fluffy. Pipe onto cake.
