Cheesecake Brownies


Cheesecake Brownies
1 package brownie mix {or your favorite homemade recipe... this is mine!}
1 {8 oz.} package cream cheese, softened
2 tbsp. butter, softened
1 tbsp. cornstarch
1 can sweetened condensed milk
1 egg
1 tsp. vanilla
1 container {16 oz.} chocolate frosting {or homemade recipe...}

1. Preheat oven to 350ºF. Grease 9x13 in. pan.

2. Prepare brownie mix according to directions. Spread into prepared baking pan.

3. In a medium bowl, beat cream cheese, cornstarch, and butter until fluffy. Gradually beat in sweetened condensed milk, egg, and vanilla until smooth. Pour cream cheese mixture evenly over brownie batter.

4. Bake in preheated oven for 45 minutes or until top is slightly browned. Allow to cool; spread with frosting and cut into bars. 

Chocolate Frosting
1 stick butter, softened
1/4 c. milk
1-2 tsp. vanilla
3 tbsp. cocoa
2-3 c. powdered sugar

I saw these a really long time ago and wanted to make them right away! But since they had so many ingredients, I kept putting it off. Something went wrong with the brownie/cheesecake layer... when I took them out of the oven it was all lumpy and weird looking. But looks aren't everything! They were amazingly delicious! Three words to describe them... classic gone crazy! :)

All I really need is love, but a little chocolate
 now and then doesn't hurt!

  3. Mmmm, these look so good! I might actually make these sometimes soon, maybe next week or something (I'm so busy tho :P).

    OK, a couple of questions (which are probably kinda stupid, but I'm no baker, so you'll just have to put up with my ignorance for now, thank you ;)...

    Just wondering, for some reason my cream cheese is quite difficult to spread on bread even, so I wonder if it being like that would mess up the recipe? Would it soften if I leave it out for a while? And about the sweetened condensed milk - I don't think I have any of that, tho I do have evaporated milk. Do you know if I could use that and add some sugar?

  4. Hi nicole! For the cream cheese, I put it in with the butter when I softened it in the microwave- that seemed to work just fine. About your question about the evaporated milk, I'm honestly not sure! I''d probably just play it safe and use sweetened condsed milk like what the recipe calls for.

  5. Thanks for the quick response! ;) Yeah, I'd usually follow the instructions perfectly for fear of botching whatever I'm doing (about the milk thing), but I kinda want to try to substitute... *daring grin* :D

    These two sources (http://www.ochef.com/500.htm and http://www.kitchensavvy.com/journal/2007/09/evaporated-vs-c.html), both with extremely similar amounts (I did the math :P don't ask me why), say you can make a pretty close substitution with evaporated milk and sugar, soo...I might try that. :)

  13. Yum! I've tried to make cheesecake brownies so many times, but I've always failed. I've never tried adding condensed milk, though. I'm gonna give this recipe a shot - hope it works for me!
