I love this recipe. Really, I do.
It's one of my grandma's {aka Nan, Nana, Nanny} recipes and I used to squeal in
excitement whenever she made it!
I had been wishing I had some of her cooking, so I decided to give this
recipe a try.
I had the exact recipe that she uses, but for some reason, some of
the baking things here just are not the same…
Like the powdered sugar for example.
The stuff tastes like it's toxic. Goodness gracious.
But this cake turned out pretty good!
I made it before we left for Swakopmund because we thought we were going to
have company over {they were a no-show.}
so I had a whole pan of cake just sitting in the fridge.
Luckily, we had two girls staying here and when we came home
I was ecstatic to find the cake was totally gone! They told me it
was amazing and they had a couple pieces a day!
In fact, Courtney {one of the girls} told me all she wanted for her
birthday from me {actually she said from my FAMILY} was a pan
of this cake:)
Nanny's Banana Bars
1 1/2 c. sugar
1/2 c. butter
2 eggs
1 tsp. vanilla
1/2 tsp. salt
3/4 c. buttermilk
2 c. flour
1 tsp. baking soda
3-4 mashed bananas
Frosting:
1/2 c. butter
2 c. powdered sugar
4 tbsp. milk
Preheat the oven to 350ºF.
Beat the sugar, butter, eggs, and vanilla.
Add the mashed bananas.
Mix in the flour, salt, and baking soda until smooth.
Pour the batter into a greased 9x13 in. pan.
Bake for about 30 minutes or until the edges are golden brown.
After the cake has cooled, beat the ingredients for the frosting together
until smooth.
Add powdered sugar if needed.
Pour the frosting over the cake and BAM!
You have some serious yummaliciousness goin' on right there!
My favorite way to eat it is after it's been refrigerated for awhile.
Then its amazingness increases! :)
