single serving deep dish chocolate chip cookies

Here it is. Yet another single serving wonder. GEEEESH. I can't get enough of this stuff. In case you missed my guest post at Angela's Adventures last week, I just had to share it with you! I even have plans to make another single serving something tomorrow!

{single serving} deep dish chocolate chip cookie
recipe from//no. 2 pencil

1 tbsp. butter, melted
1 tbsp. white sugar
1 tbsp. brown sugar
3 drops of vanilla
pinch of salt
1 egg yolk
1/4 c. flour
2 tbsp. chocolate chips 

In a bowl, ix together the butter, sugars, vanilla, and egg yolk. 
Add in the flour and salt. 
Mix until combined.
Add in the chocolate chips. 
Put the dough into a small microwaveable bowl, ramekin, or coffee cup.
Microwave for 40-60 seconds or until the cookie looks done. 
Best served warm… Enjoy!

  9. Looks delicious! I'm wondering though.. does it taste overly "eggy" at all? Every single-serve recipe I've made before seems to taste too much like eggs when it's done. :\ (Probably from the ratio of egg to other ingredients.) Thoughts on this one?

    1. Hi there! Yah, I know what you mean. I've had the same problem multiple times… But I liked the texture of this cookie and didn't find it very eggy at all. Of course everyone has different opinions though. :) In the past, when I've re-done a single serving recipe, I just reduce the amount of egg I use {since most call for a whole, I sometime use 3/4-1/2}… I hope this helps!     2. I know EXACTLY what you mean! I substituted coconut oil (about 1.5 heaping tablespoons) for the egg yolk and it tasted WONDERFUL! It was a little 'crumblier' than with the egg, but the slight coconut flavor was delicious.

    3. I'm allergic to egg yolks so I only used whites and it tasted perfect to me. If the yolks too eggy for you try an egg white instead:)

  10. I don't have any eggs at home and I know applesauce can sometimes be used as a substitute - do you think that would work here?

    1. Hmmmm… It might! Although I think applesauce/mashed banana usually replaces the oils. Give it a shot though!

    3. I did it with applesauce, and also with pumpkin! (The pumpkin was the best) I used maybe a teaspoon instead of the egg. But it did work. My family actually couldn't tell there was applesauce and it was so moist!

  11. I tried this tonight and my kids devoured it! I doubled the recipe and it was a tad sweet. Next time I will use one and a half tablespoons of white and brown sugar for a double recipe. Also I cooked in for 1:40 minutes in my microwave for it to be done. Fun!!

  13. Baked goods are NOT meant for the microwave. It ruins them. It completely cooked the egg and burned. It was a good thought though, so I just ate a bunch of chocolate chips instead.

    1. Hmm… Sorry to hear it didn't work for you! I've had the same issue with other single servings. Sometimes I just reduce the amount of egg {to either 1/2 - 3/4 of an egg} and that usually gets rid of the weird texture. So try that one next time! :)

  14. I used to make single serving cookie in a ramekin! Although I cheated and would use pre-made cookie dough, and bake it in the oven for less than 15 minutes, so it is undercooked! Then I added ice cream on top of it. Delicious! I might just have to try your from scratch and microwave version though!

  16. Making this as we speak, but I'm doubling the recipe for me & hubs. I used 2 egg yolks, but do you think 1 egg would work if I mix it all together & separate into two ramekins for cooking?

  17. Is there a trick to microwaving it? I've tried it twice, and both times it exploded all over the microwave. At first I just thought my ramekin was too small, but when I moved it into a small bowl it still oozed everywhere.

  19. I tried this twice and it wasn't bad but was chewy... Just couldn't get it right. If I cooked it less it would hang been undercooked :(

  20. I just made this without egg and it turned out pretty good! Instead of egg I used about 1 tsp of ground flaxseed with 1 tbsp of water. Definitely not the same as an oven baked cookie, but a quick sweet when you don't want to go to the trouble of making a whole batch of cookies.

  22. I just made this and it was so good! I cooked it for the whole 60 seconds, and it came out exactly like the picture.
    The only thing I would change for next time, is I would add a scoop of icecream on top! Yum!

  25. Mine didn't look like the picture, it looked kinda floury and raw still, so I kept heating it, thinking it wasn't done. I overcooked it a little bit (actually it probably wasn't overcooked at all, but I like mine really gooey), but it was still really good! Topped it with some ice cream, and it was perfect. Next time I think I'll use 1/2 tablespoon of each of the sugars, because it was a tad bit too sweet for me!

  30. Just made this for my family. I quadrupled the recipe exactly and cooked for 90 seconds in microwave and let rest a minute. Maybe a tad much four but that's because my son measured it. Looked and tastes perfect especially with a scoop of ice cream on top. Thanks so much!!

  31. I just had to comment on this. Thought I'd give this a try. I think what is going wrong with alot of people cookie is the microwave power. Have learnt, the hard way, that my microwave is pretty powerful and burns alot of things. So I turned the power of my microwave to 720 watts, cooked the cookie for 50 secs and it came out perfectly! Ice cream on top definitely would have been good.

  32. Mmmmmm, this really hit the spot when I was craving something sweet! I made it with xylitol in place of the white sugar, palm sugar in place of the brown, and whole wheat flour(I do these substitutions in most of my baking)and it turned out great! Big portion though so I shared with my sons...topped it all off with ice cream and it was a wonderful treat. Thanks!

  33. Made it exactly as noted above and it came out kind of chalky. Wasn't very tasty and my husband and i ended up throwing it out. I think the problem may have been I was expecting the same chocolate chip cookie taste that was missing. Urg, sorry about that one.

  42. Just thought I'd offer this suggeston: I made this in a coffee mug the other day, and it turned out pretty good. Thought I'd try it again and add ice cream. I used a different mug tonight, and it did not "cook" and almost looked like it was about to blow. I transferred it back to the same cup I used the other day and finished cooking, and it turned out good again. So if you have problems you may want to try again in a different container...

  46. Just made this and I have been reading everyone's comments about it not turning out good. Here is what I think the problem is. You probably need to cook it in a wide shallow something so it doesn't end up too thick. If it gets too thick then the middle will get overcooked and be crumbly and hard. I mixed mine in a small pyrex bowl then microwaved it in that. The middle where it is thicker is over cooked, but the edges are perfect. Also, if you have a powerful microwave (it should say somewhere on it, mine is 1100 watts, which is a lot), you might have to turn the power down when you cook it, then cook it for the full time. That's just what I think would help.

  48. I just made one, with a little tweaking. I didn't have an egg yolk I could part with, so I looked it up and found you could mix 1 Tbsp vinegar with 1 tsp baking soda to get the light, fluffiness needed in cookies. I did that and it was pretty good! I think next time I will leave out the salt, since the baking soda adds a "salty" quality. I also lowered my 1250watt microwave down to 60% and did if for a minute. It was a little overcooked, but next time I'm sure it will be perfect in 50 seconds. I am so glad I found this on Pinterest!

  51. This is awesome, great for when you want a sweet treat but not the temptation for days of a whole batch. Turns out much better textured/tasting/looking if you cream the butter with the sugars like you would for a normal cookie than if you melt the butter. I also used half semisweet chocolate chips and half butterscotch chips - it's kind of my standard "secret" recipe for chocolate chip cookies. Yum!

  53. Perfect! I made 2. Hubby wanted cookies the other day, but I made brownies instead. Saw this one, and ti was fate!! I had 2 tbsp of butter leftover from the last thing I made! I did nuke it for a bit longer, probably about 1:30 or maybe evne longer, but I had 2 in the micro and it seemed to be running a little slow. After 1 min it was still totally raw.

I love that it is a single serving because my husband is allergic to chocolate so i hadnt been able to make chocolate chip cookies since being married because i couldnt justify baking a whole batch for just me. Now i can enjoy chocolate chip cookies at home again! Yay!

  62. Turned out pretty good. I cooked it for 40 seconds and it wasn't as moist as I would prefer. I did use Parkay spread from the bottle because I was out of stick butter. Next time I will do it for about 30 seconds if I use Parkay again. That should be perfect. I'm on a baking frenzy and I wanted to make chocolate chip cookies from scratch tonight, but realized I was out of butter. This satisfied me enough to wait til I hit the grocery for some baked cookies. Thanks for sharing. :)

  64. Just tried making this for myself and my grandparents who were stoked to have a sweet treat yet not tempted to eat a whole batch of cookies. We put them in a glass bowl, maybe that was the problem, but ours didn't do anything but bubble over. After one minute it looked like a soupy mess so we just tried cooking it more and all it did was overflow. May try another night in a mug but don't know what the problem was here. ): So unfortunate.

  77. This was fantastic! I found this on pinterest and decided to make it this morning! :) Instead of the egg yolk I beat one egg and took about a table spoon out of the egg! It wasn't too eggy and I think it was just about right! This recipe is coming to college with me!

  83. Ok! So I tried it and these are my thoughts.
    1. Microwave power. You need to be aware of your own microwaves power and adjust. Mines a 1250 so I brought the power level to 7 and did 50 seconds. It could have been real bad if I would have thrown it in as is.
    2. Personally, I will try the oven next. I can wait 15 minutes.
    3. I melted the butter in my ramekin so it was pre-greased.

  84. So I tweeked this a bit to make it a bit lower in carbs and to fix the egg dilemma.

    I doubled the recipe and cooked it in a regular sized cereal bowl. One recipe is not enough!!
    Instead of regular flour, I used almond flour/meal. It gave it the cookie texture I was craving.
    I also cracked my egg and whisked it in a small bowl and then took one of the shell halves and added two of those full of whisked egg to mixture. You can either cook the rest of the egg for your salad for lunch or add it to puppies or kitties crunches for a surprise treat. I used a Splenda/Stevia mix for the white sugar. The rest of the recipe I left the same. I cooked it for the 60 seconds and let it sit for a couple of minutes to finish cooking. Fantastic!

  88. Just made this and it was absolutely amazing! Used about 1/2 the egg yolk and didn't have vanilla, so I added a dash of cinnamon. Also didnt have an chocolate chips. Lol Still turned out great though! Less of a cookie consistency and more of a super moist scone. Great recipe! I will definitely use it again!

  90. Wow, I just looked up the calories for this using only 1 TBSP sugar and its 474 calories. I won't be making this again. I wish I would have done this BEFORE I ate it.

  102. I just made this after reading all the previous comments. I made mine with applesauce instead of an egg yolk and left out a little bit of the flour by accident. I also did it in a shallow microwaveable bowl. And only microwaved it for 40 seconds then 10 more (so 50) and it's a little uncooked on the outside, but its wonderful!! I don't mind half-cooked cookie dough!! Thank you for sharing the recipe!!

  104. I just made this for my husband, it turned out perfectly! I cooked it the full 60 seconds, and added some extra chocolate chips on the top. It was the perfect solution when you are looking for a quick desert. I will make this again for sure!! Two Thumbs up !

  106. I just tried this, following the recipe exactly and cooking for one minute. The dough itself was crumbly, and the finished cookie was dry, crumbly, and very blah tasting. Once it cooled, it was chewy. It also seems like it's missing something completely. Sorry, my family and I are not impressed, and we decided to just put the effort to making real, from scratch cookies. Good luck to anyone else who tries it.

  119. Oh these Chocolate Chip Cookies look definitely perfect! I know for a reality no one ever consumes all the factors I create, so I try to range down dishes as much as I can. Usually it’s the egg that gets me because once you begin splitting factors by 3 it gets type of hard

  123. EPIC FAIL!! This did NOT turn out anything like the picture. This is TOOO thick to cook in a microwave for 1 minute. It will NOT be done. Try baking in a preheated oven at 350 degrees for about 8-10 minutes.

  124. I just finished eating one of these. First attempt, 50 secs in microwave and perfect! So yummy! Maybe just a few less choc chips next time, I went overboard with them! Usually I can down a packet of cookies but just one of these hit the spot! Quick and easy :-D

  125. I love this! I made it with coconut sugar and molasses for the sugars, used a whole small banty egg and white rice flour. Turned out great! I did read on some other sites that the glaze used on some mugs may have metals in it, so that could explain some of the issues people are having with it overheating (exploding, overcooked). Also, your elevation and the power of your microwave will affect the end result. I'm at 1000ft, small apartment microwave (1000 watts?) And it worked great. My color always turns out different because of the coconut sugar and molasses i always use, but only the flavors matter. Thanks for sharing this!
