My first pan of these cookies were an absolute fail! I was thinking of taking a picture but I wouldn't want you to see the horror. ;) They bottoms of the cookies that were at the back of the oven were BLACK, yet the ones in the front of the oven were golden. I swear, the oven that we have may be the first one ever invented.
Peanut Butter Oatmeal Cookies
1 cup butter or margarine, softened
1 cup packed brown sugar
3/4 cup granulated sugar
1 cup peanut butter
2 eggs (or egg substitute)
1 1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 cup quick cooking oats
Directions:
Preheat oven to 350 degrees. In a large bowl, cream butter, sugars, and peanut butter. Beat in the eggs until well blended. Combine the flour, baking soda, salt, and oats; stir into creamed mixture until well mixed. Drop by teaspoonfuls onto ungreased baking sheets about 2 inches apart. Bake for 10 to 15 minutes or until lightly browned.
Freezing Directions:
Allow to cool completely before transferring cookies to gallon freezer bags or freezer safe containers.

ReplyDeleteWe have something in common. Two years ago we had a kitchen fire. Since then we have been cooking and baking on a tiny stove top/oven. It has one burner the size of the bottom of a coke can. The big burner is big enough to hold our biggest pot. The oven burns everything black in the back unless you take out and turn around whatever you are baking at 10 minute intervals. It is a struggle but someday I will be able to get a real burners and a new oven. The recipe sounds yummy and the photo is yummy! thank you for sharing
