Peanut Butter Chocolate Chip Granola Bars


I love granola bars. Always have, always will. 
But all the junk that they add in there
disguised as healthy? Not so great.

I haven't really seen much granola bar action going on around here… And since I'm trying
to eat "healthier" {therefore not eating dessert for every meal.} I thought I'd try to make these!
They're super yummy and you don't have to feel bad about eating them…
Although when you eat half of the pan, you might have to start thinking
 about your actions. ;)



And as we all know chocolate and peanut butter are a match made in heaven.
In cookies, bars, bread, pancakes, cupcakes, cake, the list goes on…
One thing I miss? REESE'S peanut butter cups… UGH! You can't
get anything remotely close to that here. ALTHOUGH my awesomely-great
friend sent me a care-package and Reese's are all apart of the deal.
I'm so excited!

Anyhoo… these bars are so good! It's almost like oatmeal chocolate chip
cookies but minus all the sugar and shtuff… AND they're super adaptable!
You could use different add-ins like nuts and dried fruit, or different kinds
of baking chips. 

Peanut Butter Chocolate Chip Granola Bars
 Recipe adapted from Sally's Baking Addiction

3/4 c. peanut butter
2 tbsp. butter, melted
1/3 c. honey
1 egg
1 tsp. vanilla
3 1/2 c. oats
1/4 c. brown sugar
3/4 tsp. salt
2/3 c. chocolate chips
1/4 c. peanuts, chopped

Preheat your oven to 350ºF. Spray an 8x8 baking pan with cooking spray and set aside. 

In a small bowl, beat the melted butter and peanut butter until smooth.

Add in honey, egg, and vanilla until completely combined.

Mix in the oats, brown sugar, and salt. Mix well. Slowly stir in the chocolate chips
and chopped peanuts. 

Transfer to the baking pan and press down, making sure the surface is flat and even. 

Bake 21-24 minutes or until set and the edges are lightly browned. 

Allow to cool completely before cutting into squares.
