I'm back and super excited to (hopefully) start sharing more wonderful recipes and photos with you! These cookies look super delicious and are really easy to make. I was planning on bringing them to our outdoor church service on Sunday, but then I "sampled" one and decided they were too good to share!! Enjoy!(:
Oatmeal Peanut Butter Cookies
Makes 2 dozen
Ingredients
- 1/4 cup shortening
- 1/4 cup margarine, softened
- 1/2 cup packed brown sugar
- 1/4 cup and 2 tablespoons white sugar
- 1/2 cup peanut butter
- 1 eggs
- 3/4 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup quick-cooking oats
Directions
This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 4 dozen.
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together shortening, margarine, brown sugar, white sugar, and peanut butter until smooth. Beat in the eggs one at a time until well blended. Combine the flour, baking soda, and salt; stir into the creamed mixture. Mix in the oats until just combined. Drop by teaspoonfuls onto ungreased cookie sheets.
- Bake for 10 to 15 minutes in the preheated oven, or until just light brown. Don't over-bake. Cool and store in an airtight container.
