Peach Fro-Yo

I KNOW! It's been awhile since we last chatted and ate cookies together…
This weird thing called Healthy Eating happened.

I'm trying to lose a little weight, and since sadly, you can't eat pans of cookies,
brownies, and cupcakes in order to do so,
I haven't gotten around to baking much.

Instead of snacking on Chips Ahoy and Coke Zero, I've been eating veggies
and GALLONS of water. Weird, I know.

I'm going over to a friend's house for some Girl Time in a little bit.
Yah, the same one I made banana bread for…

We like food. And have the ability to eat a whole loaf of bread. TALENT, I tell you.
No doubt, the tub of fro-yo will be fro-yo-less by the time I get home.

So let's talk about it, shall we? It's amazing.

I had INTENTIONS of making it healthy, BUT…
my baking instincts kicked in and some how a whole cup 'a sugar made
it's way into the bowl. WHOOPS. Don't know how that happened!

I'm pretty sure it's healthier than a huge ice cream sundae though…

Of course, you could make it ACTUALLY healthy, and cut out the sugar and use honey
or some other low-cal sweetener.

I just found it a little to… yogurty. And we were out of honey. Excuses, excuses.

Peach Fro-Yo
4 c. plain fat-free yogurt
1 c. milk
1 c. sugar
1 tsp. vanilla
1 can of peaches {juice too!}

In a bowl, mix the yogurt, milk, yogurt, vanilla, and juice from the canned peaches.
Add in the sugar. Stir until smooth.
Chop the peaches into chunks and add to the mixture.
Pour into an airtight container, and put in the freezer until it's hard.
{I had mine in the freezer overnight.}

Lemon Raspberry Sorbet

Guess what? I fried food successfully last night… It was pretty much a godsent miracle.

My mom and I wanted to have fish tacos. So I suggested frying the fish. She left that part up to me. Win!

At first I was sort of scared for my life… Ya know. Oil flying, flour dripping. Nothing pretty. But the result was pretty. Beautiful, actually.

Golden crispy fried fish filets. Goodness gracious, me oh my. It was totally worth the trouble. And really, it wasn't even that hard minus the fact I was scared of losing a finger and boiling to my death.

Since I successfully fried edible goodness, I'm pretty positive I can fry anything… Apple fritters, chicken, DONUTS. I see those babies comin' in the near future.

I ended up getting super hyper… Good food gets to me.

I asked my mom "Does fish have caffeine in it?" "Umm… no." "Are you sure?" "I'm pretty sure."

I don't believe it though.

I was so excited, I was prancing across my kitchen, dancing to Owl City and a little bit of Maroon 5, singing into the tongs like a goon. Awesome right? I'm a beast, I know.

Ok enough fish talk. Let's talk sorbet. This stuff is good. Like really good. Like "Holy moly. Get me a shovel!" good. OR… "GET ME A DUMP TRUCK OF THIS STUFF!"

I need to ask you a question. And it's some serious chiz.

Why the hay is raspberry spelled with a P? No one says "Here… have a rasPPPPPPPPPPberry." At least I hope no one says that… Because if you do, we can no longer be friends. So sorry.

Anyways… As you all know I had a little tooth issue the other day… {click for pink mustaches! And to know what happened.} Anything cold in my mouth felt so heavenly. Luckily the day after getting my tooth pulled, the pain had eased… And it just felt like my cheek was the size of a basketball. No big deal.

When I felt up to it, I decided to make sorbet. It has fruit in it guys, therefore it is healthy. Plus the lot 'a sugar but it's only for your sake, I promise. So go and do your happy dance!

When I found some frozen raspberries at the store last week, I was SO excited. And I just so happened
to have a humongolous amount of lemons in the fruit bowl. I knew exactly what I was going to whip up…

Lemon Raspberry Sorbet, that's what.

Oh also umm… I pretty much {totally} made this recipe up on my own. Yup. And wanna know what it tastes like? The lemon ice with raspberries on top from Culvers… YUM! It's legit.

Lemon Raspberry Sorbet

2 c. white sugar
2 c. water
4 c. frozen raspberries {I'm sure you could use fresh ones}
1 tbsp. honey
5 tbsp. fresh lemon juice

In a small saucepan, bring the water and sugar to a boil.
Once it's cooled, puree the raspberries, honey, and lemon juice in a blender.
Add in the simple syrup. Pour the mixture into a freezer safe container
{I used a pie pan and covered it with tin foil.}

Guest Blogger Friday {#6}

Hello, My Happy Place readers! I’m Shatzi and I blog over at Love and Laundry.  I’m a stay at home mom of three awesome kiddos and I love learning and experimenting with new things.  My favorite things are sewing, cooking, crafting and reading. I blog all about what I’m up to.   Here are some of the things I’ve been doing lately:

post features for guest blogging

I’m so glad Sophie let me join you today. I love her blog – she is really inspiring to so many people. And I love her recipes! Especially her single serve desserts (who wouldn’t love a single serving of deep dish chocolate chip cookie? YUM!!)

If there is one thing I love, it’s chocolate.  Most of the time, if I have to choose between chocolate and something else, chocolate wins.  One of my favorite ways to have chocolate is a cup full of steamy hot chocolate on a cold winter night.  But it’s summer now and that won’t do.  So, today I’m going to share with you one of my new favorite summer dessert drinks. Frozen Hot Chocolate!

frozen hot chocolate

About a month ago, I took my kids to Dairy Queen for lunch.  I noticed that they had a frozen hot chocolate on the menu, so I had to try it.  It was yummy!  So good that I almost wished I never discovered it. I knew that my wallet was doomed to shrink to nothing by the end of the summer just from buying frozen hot chocolates.  That would never do, so I sought out to make an equally wonderful version at home.  In my opinion, this is way better than the DQ version. This recipe is really pretty fast and easy.  And a huge hit with my kids!

Here’s what you need:

frozen hot chocolate ingredients

3 squares of bakers chocolate (or 3 oz of chocolate chips)
2 teaspoons of cocoa (I haven’t tried it, but I’m sure you could substitute hot chocolate mix)
1/4 cup of sugar
2 cups of milk
About 3–4 cups of ice
{This recipe serves about 4-5 people}

First, melt the chocolate squares in the milk on low heat. When the chocolate starts to melt, add the sugar and stir well.

frozen hot chocolate step 1

After all of the chocolate is melted and it looks smooth, remove from the heat and let it cool down.

After it’s cooled off, pour the chocolate and milk into a blender. Add the ice and cocoa powder and blend.

frozen hot chocolate step 2

And that’s it! Super easy and super delicious! It’s a perfect summer time treat without heating up the house.  And now I can enjoy the yumminess of hot chocolate all year long!

Thank you, Sophie, for letting me hang out here today.

If you like what you see, you can keep up with me on Facebook, Pinterest, Twitter, and RSS.

--------------------------------------------------------------------------------------------

Doesn't that look SO good? I can't wait to make it! Thanks for coming on over today, Shatzi! Ya'll should go and check out her blog! It's completely adorable :) Have a great day!

Strawberry Cheesecake Ice Cream

I felt so horrible today. I think it was that 24 hour flu-ish thing… At least I hope it's that and not malaria or something else.

I swear I probably got about an hour of sleep total last night with all of the horrible tummy aches, chills, and what not. So when I woke up {or "decided to get out of bed"} I took a hot bath and crawled back into bed, read as much as my head could manage… which by the way was like two sentences- my head throbbed, and then I fell back asleep.

When I woke up from my nap I had a fever of 101 but it eventually went back down. So basically I spent the whole day in bed watching 30 Rock and eating crackers… FUN! Not.

 I remembered I had this ice cream in the freezer and decided to give it a shot… Hoping my tummy wouldn't get mad. It was SO good! Super creamy and thick with chunk-idy-chunks of strawberries, cream cheese, and cookie goodness.

I love that I can make ice cream without using a machine… My ice-creamy brain is thinking of a zillion different variations. This shtuff is so good especially considering that everything is just plopped in a blender and frozen…

BOOM! You have yourself a yummy summer treat right there. Oh yes you do.

Strawberry Cheesecake Ice Cream

1 can sweetened condensed milk
1 8 oz. package cream cheese
2 c. frozen strawberries {or the fresh stuff}
1/3 c. cream
1 1/2 c. tea biscuits {or graham crackers}

Put the sweetened condensed milk, cream cheese, and cream in a blender until smooth. Add the tea biscuits and strawberries. Blend until everything is in chunks. Pour into a plastic container and freeze.

Orange Dreamsicle Cookies

First of all, I'd like to thank everyone who emailed me about guest blogging!
It was a busy-bloggy couple of days scheduling and
emailing back and forth, but I'm so thankful for all of you who are
willing to post! And I can't wait to see what everyone comes up with.
We filled lots and lots of spots, but if you're still interested in posting,
email me and I'll give you some dates.

I had one of those days today where I did school all day, not caring one bit about my appearance.
I was sitting in the kitchen still in my jammies at 2 o'clock in the afternoon thinking to myself
"Wow. I'm so home schooled."
But it is indeed true, so I guess it's time to face the music.  :)

I love the taste of fresh orange in cookies! Wait, I take that back. IN ANYTHING!
Seriously. When I was juicing the orange for these cookies,
my kitchen smelled like… fresh squeezed Florida oranges. Yum.
I have a recipe for lemon crinkle cookies {that I still have yet to try} but I thought I'd
remake them using orange instead of lemon and adding white chocolate chunks. The cookie was super soft and chewy, and had little buttery chunks coming from the white chocolate. It. was. so. good.

Orange Dreamsicle Cookies
1/2 c. butter, softened
1/2 tsp. vanilla
1 tsp. orange zest
2 tbsp. freshly squeezed orange juice
1 egg
1 c. sugar
1 3/4 c. flour
1/4 tsp. salt
1/4 tsp. baking powder
1/8 tsp. baking soda
1 white chocolate bar, chopped

Preheat oven to 350ºF. Grease a baking sheet and set aside.
In a large bowl, cream together the butter and sugar until light and fluffy.
Whip in egg and vanilla, orange zest and juice.
Stir in all dry ingredients slowly until just combined.
Add in white chocolate chunks.
Drop by tablespoonful onto prepared baking sheet.
Bake for 9-11 minutes or until the edges are lightly browned.
