Gingerbread Waffles

Hey y'all! Today, I have Julie here from White Lights on Wednesday! She's the sweetest, and we've posted on each others' blogs quite a few times before. Like that time she shared these Chocolate Sprinkle Cookies… She's so awesome! :) Today, she's sharing a DELICIOUS recipe on MHP, that I know you guys will love! Be sure to check out Julie's blog today, because not only will it leave you drooling, BUT some to-die-for pancakes are making an appearance today from yours truly!

I wanted to share something seasonal that would scream I-wish-I-was-in-front-of-a-fire snuggling, but a little different.  Then I found these Gingerbread Waffles.  They are amazing!  Breakfast happiness on a fork, full of baking spices and that perfect cozy feeling.  These waffles will leave you feeling like you just got a big hug.  And who doesn't need a hug?



Gingerbread Waffles

Ingredients:
1 1/2 cups milk
Juice from 1/2 a lemon
2 tablespoons brown sugar
1/4 cup butter, melted
3 eggs
1/4 cup molasses
2 teaspoons ground cinnamon
1 1/2 teaspoons ground ginger
1/4 teaspoon groudn nutmeg
1/4 teaspoon ground cloves

2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda

Directions:
  1. In a small bowl, add milk and lemon juice.  Stir to combine; set aside.
  2. In a medium bowl, combine flour, baking powder, and baking soda; set aside.
  3. In a large bowl, whisk together melted butter and brown sugar.  Add eggs and molasses, whisk to combine.  Add milk mixture, cinnamon, ginger, nutmeg, and cloves; whisk until smooth and spices are incorporated.
  4. Add flour mixture to wet ingredients in two additions, whisking just until combined each time.
  5. Heat waffle iron and spray lightly with non-stick cooking spray.
  6. Add 1/2 cup waffle batter to waffle iron and cook 3 to 5 minutes until done and slightly browned.  {I normally use 3/4 cup batter in my iron, these waffles puff up a lot and cook quickly.}
  7. Serve buttered with maple syrup and powdered sugar.

So today, I went out with a friend for her birthday because it's tomorrow and we're kinda sorta leaving for Victoria Falls tomorrow… Do you think it's a little weird that I had coffee and those leftover pretzel butterscotch blondies from yesterday and I had coffee and cake for lunch…Yeesh.

Guest Post

Guest posts always put me in a good mood. Especially because today, I feel like poo. 
{Hey it rhymes! hehehe:) very unintentional.}
We were out running errands this morning, and when we came home, I crashed.
 I have a headache, chills, EXTREME achey-ness, and on-and-off tummy aches.
Not fun. 

So here I sit. All alone in my house in my sweats, comfy socks, and baggy sweatshirt,
bundled up in my pink fluffy comforter, watching THE stupidest show in the world because
 there's nothing else on. MEHHHH.

Enough of my minor troubles. lol:)

Mini Chocolate Chip Pancake Muffins {guest post}


Hello all! My name is Devi and I blog over at Diddles & Dumplings. Let me start by saying thank you to Sophie for allowing me to come over and write up a guest post on her amazing blog! I can't tell you enough how impressed I am with this girl! Her recipes both look and sound amazing! At such a young age she is already so talented and I can't wait to see where her blog takes her!

Like I mentioned, I'm Devi, and I'm a wife and mother in Central California. My daughter is finishing up Kindergarten and is going to be a first grader in no time. I don't think I'm prepared for this whole "growing up" thing, but i'm sure that with enough brownies, pie and ice cream, I might just make it through.

I often get compliments on the name of my blog, Diddles & Dumplings, but get asked the question: "What are diddles?" And  guess what? You lucky people are the first to know that Diddles, is in fact, my daughter's nickname! My husband lovingly calls her Diddles and has since she was just a wee little squishy baby in diapers. I bet you're all so relieved now that you know the true meaning behind the name! You will have no more sleepless nights, tossing and turning and trying to figure out what my blog's name could possibly mean. You're welcome!

Now, on to the recipe (which is really everyone's favorite part, right?) Since Sophie is an amazing baker, I decide to whip up something adorable, tasty and just plain awesome. I made... wait for it... Pancake Muffins! But, they're not just any old pancake muffins, oh no... these pancake muffins are served on skewers, which makes them perfect for dipping into some mapley syruppy goodness. They're the perfect breakfast food, the perfect snack food and the perfect dessert. They are the perfect little creation birthed by the perfect parents (pancakes and muffins, of course). Thank you pancake muffins, for making my life complete.


Mini Chocolate Chip Pancake Muffins Recipe:
2 cups pancake mix
1/4 cup white sugar
1 egg (beaten)
1/2 cup water
1/2 cup milk
1 teaspoon vanilla
1/2 cup mini semi-sweet chocolate chips
3 tablespoons maple syrup
*More syrup for dipping!

Preheat oven to 350 degrees.

Grease a mini muffin pan and set aside.

In a medium bowl, combine pancake mix and sugar. Stir in water, milk, egg, vanilla and syrup. Mix in chocolate chips and combine well.

Fill each section of the mini muffin pan just over 1/2 full.

Bake for 9-10 minutes, or until you can insert a toothpick and it comes out clean.

Place muffins on skewers and serve hot with plenty of maple syrup for dipping!

Recipe makes 36 mini muffins.

Guest Post {Lindsey}

Bonjour darlings! I'm Lindsey from Sprinkles of My Life. :)


First of all, I'd like to say thanks to Sophie who graciously allowed me to guestpost here today!!! :) We have been emailing for a while, and she is such a sweetheart. <3 I think it's so cool how her and her family are serving Christ over in Nambia, Africa! I would like to do that sometime. :D

But...on to my post.

We didn't really come up with a set topic for me to post about, so I'll just talk a little about me and my blog! 

So I'm Lindsey. A 15 year old homeschooled freshman in highschool. I am also a...passionate singer, observant photographer, letter writer, cupcake baker, eater of desserts, 9th year piano student, and LOVER of my Lord and Savior, Jesus Christ. <3 He is the whole reason I am here today and I thank Him for creating me and loving me just the way I am. :)

Hopefully you know by now that I have a blog. ;D hehe. I regularly blog at Sprinkles of My Life, and enjoy every bit of the blogger world! Making new friends (like Sophie ;), creating fun and unique blog posts, reading my favorite blogs, blog hopping and entering giveaways are just a few of the very many things I do in the blogging world. Along with my blog, I also have a shop or small business called Friendship Twists: Bracelets & Anklets! There I sell handmade friendship bracelets and anklets (duh! hehe.). Jumbo Oatmeal Peanut Butter Cookies {guest post}

Hi everyone! We have a special guest today! 
I've gotten to know Kristin a little bit over the last few weeks, while we've been putting together recipes for each other! She's really sweet and I love all the yummy recipes she shares on her blog! Be sure to check it out and leave some bloggin' love! :)

I love it, and I think Sophia is pretty darn talented!
I've loved getting to know her a little, and 
I can tell we have a lot in common in the dessert area.  We both love them!

And...I love, love, love Chocolate Chip Cookies. 
 I love making them and I love eating them, and so do my kids!  
So, I feel like sometimes I get into a cookie rut.  
(Which is okay with me, I'm not complaining, or anything!)  
But, I like this recipe because it's still an 
awesomely delicious Chocolate Chip Cookie,
 but even better, with oatmeal and peanut butter.  
Sometimes I like to live dangerously...what can I say?

Jumbo Oatmeal Peanut Butter Cookies

Ingredients:
3/4 cup margarine
1/2 cup peanut butter
1 cup sugar
1 cup brown sugar
2 eggs
1/4 cup milk
1 tsp vanilla
2 cups flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 1/2 cups oatmeal
2 cups chocolate chips

Instructions:
Cream margarine, peanut butter, brown sugar, and sugar.  Add eggs, milk, and vanilla and mix well.  Gradually add the flour, baking soda, salt, and cinnamon.  Stir in the oatmeal and chocolate chips.  Drop large spoonfuls of dough onto ungreased cookie sheet.  Bake at 375 for 10 minutes.  

WOW! See what I mean when I said she shares yummy recipes? I think I'm going to have to give those a try! Thanks again Kristin! :)

Hello everyone! When Sophie asked me to guest post on her blog, I was really excited! Just to let you know, I'm not too good at this whole guest post thing, but I'll do my best. :)


This is me.

...and I love to bake.

Here is one of my favourite recipes, for Chocolate Chip Cookie Dough Cupcakes! 
Sorry about the pictures. I'm not much of a photographer. 

Here. I'll just get all the pictures over with first, and then you can scroll to the bottom for the recipe.



So, basically what you do, is make chocolate chip cookie dough into balls and freeze it overnight.
Here are mine.


Then you make cupcake batter, and stick the frozen balls into the batter.
Like so...


 Now bake them. Mmm....



Iced and sprinkled with chocolate chips....



The finished product. Doesn't that cookie dough in the middle look scrumptious?



For the cookie dough:
2 sticks softened butter (one stick is 1/4 of a cup)
3/4 cup sugar
3/4 cup brown sugar
4 tbsp milk
1 tbsp vanilla
2 1/2 cups all purpose flour
1/4 tsp. salt
1 cup mini chocolate chips

For the cupcakes:
3 sticks softened butter
1 1/2 cups light brown sugar, packed
4 large eggs
2 2/3 cups all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 cup milk
2 tsp. vanilla extract

For the frosting:
3 sticks softened butter
3/4 cup light brown sugar, packed
3 1/2 cups powdered sugar
1/2 tsp. salt
2 tbsp. milk
1 tsp. vanilla extract

Directions:

To make the cookie dough, combine the butter and sugars in a mixing bowl and cream on medium-high speed until light and fluffy, about 2 mins. Beat in milk and vanilla until incorporated and smooth. Beat in the flour and salt until just combined. Stir in the chocolate chips. Using a 1.5 tbsp scoop, shape the dough into balls or tubes. Freeze on a parchment lined baking sheet overnight.

To make the cupcakes, preheat the oven to 350° F. Line two cupcake pans with paper liners (24 total). In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and brown sugar. Beat together on medium-high speed until light and fluffy, about 3 minutes. Mix in the eggs one at a time, beating well after each addition and scraping down the sides of the bowl as needed.

Combine the flour, baking powder, baking soda, and salt in a medium bowl. Stir together to blend. Add the dry ingredients to the mixer bowl on low speed, alternating with the milk, beginning and ending with the dry ingredients, mixing each addition just until incorporated. Blend in the vanilla.

Using a 3 tbsp scoop, fill the prepared cupcake liners 2/3 full with the cupcake batter. Place a frozen cookie dough ball on the top center of each cupcake.

Bake at 350 for 16-18 mins.

To make the frosting, combine the butter and brown sugar in a mixing bowl and cream on medium-high speed until light and fluffy. Beat in the powdered sugar until smooth. Beat in the salt, milk, and vanilla extract until smooth and combined.

Frost the cupcakes and sprinkle with mini chocolate chips!

Makes 24 cupcakes.

Hi everyone! So I was just featured at Baker's Corner a couple days ago, but I was also given the chance to have another friend be featured HERE! I'm super excited! Pie {her screen-name} has been one of my bestest friends since FOREVER! I love her and her blog so much! Thanks so much for doing this Pie!

My blog is a place where I can relay thoughts and my life, my friend's lives, and my family's lives. It is a place where I express myself and tell about the activities I do, the people I love, and the things that make me, me. I started writing this blog because it was the only thing that I could think of to do since I am not allowed to be on twitter, facebook, or pintrist. I have come to love blogging and I think it was, and is, the better choice.

that "Book Blogger" gave me the chance to post over here! I'm just going to let you know
ahead of time, this IS my very first guest post {and I am super excited!} so I
don't know if there's any "normal" way to do it... But oh well!(;



A little bit about me and the {many} things I enjoy...
 First of all, I love blogging! It gives me the opportunity

A little bit about my "bloggy-blog" {that's what I call my blog...} 
"La Creativite De La Fille" is French for "The Girl's Creativeness"...
I love French stuff and I'm creative {so I'm told!} and that's the name I came up with!
I started my blog in April because my mom had a blog, and I loved the thought of being able
to design my own website and share all my ideas and things.
 I have taught myself pretty much everything that I know about all that
shmancy-pants HTML codes, blog templates, signatures, and stuff like that. 
Seeing a blog transform with things like that, gets me very excited!(:
On my blog, I share all my yummy recipes, baking experiences, crafty ideas,
and photography. So please stop by- I would love to have you as a follower! 

But before I leave, I thought I should probably share with you a recipe! These cookies
are some of my absolute favorite and my specialty. They actually won 4th place at our local County Fair this summer... Enjoy!

White Chocolate Chip and Cranberry Cookies
Ingredients:
                                                        1/2 c. butter, softened                                                          
1/2 c. packed brown sugar
1/2 c. white sugar
1 egg
1 tablespoon brandy {I used vanilla}
1 1/2 c. all-purpose flour
1/2 tsp. baking soda
3/4 c. white chocolate chips
1 c. dried cranberries

Directions:
1. Preheat oven to 375ºF. Grease cookie sheets

2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg and brandy {vanilla}. Combine the flour and baking soda; stir into the sugar mixture. Mix in the white chocolate chips and cranberries. Drop by heaping spoonfuls onto prepared cookie sheets.

3. Bake for 8-10 minutes in the preheated oven. For best results. take them out while they are still doughy. Allow cookies to cool for 1 minute on the cookie sheets before transferring them to wire racks to cool completely.
