Browned Butter Funfetti Sugar Cookies


First of all, please forgive me for being MIA on the blog lately. I have a couple excuses… 

FIRST, I just hadn't baked anything. Laziness and healthiness were to blame there. 

And SECOND, I didn't want to post much the week of Christmas, because I knew everyone was out of town, and anything I posted would go unnoticed other than maybe a whopping three pageviews. 

Accept my apology, because hey, I made you cookies!


Sooooo… Christmas was this week and I did not make one blessed Christmas cookie this year. 

Is that wrong? Seriously. I feel kinda guilty about it. 

Although we have frosted sugar cookies, but let me tell you, they were, uhh... not very photo-worthy. They'd make Bridget go crazy, I'm sure because her cookies are beyooooond perfection. 

Anyways. It's not that I'm bah-humbug-gy in any way.

Trust me, if we were in the US, I'd be decked out in Christmas lights and ugly sweaters, chowing down on one oreo truffle and russian tea cake after another.  

Just kidding. 

Not about the last part though. 


But I would seriously be willing to make batches and batches of these for any occasion! 

They turned out a little… browner than I would have liked. But that's because I threw in some dark brown sugar for some added chewiness. 

Can you tell that was a good choice? It totally was.

These beauties are fluffy, a little cakey, and a little chewy. The perfect cookies if you ask me.

So perfect in fact, I lied to you and told you I'd be coming back to the bloggy world tomorrow. But no. I decided you NEEDED these cookies. Like your life depended on it. 



This was my first time ever browning butter! Can you believe it?

Until a couple months ago, I didn't even know what browned butter was! {… And I call myself a food blogger. *gasp*} 

It was way easier than I thought! I was so paranoid about burning it though, so I called for my mother to be with me for this important milestone in my life. 

So I encourage you to take that extra step of browning the butter. WAY WORTH IT!

These cookies are just like your average sugar cookie with a few twists. They get a kick of vanilla with a whole three teaspoons of the stuff as well as some yellow cake mix, some added flavor from the brown butter, and a splash of color thanks to the beloved sprinkle. Chewy, cakey, and fluffy, I know you'll love them! 

Browned Butter Funfetti Sugar Cookies
2 c. flour
3/4 c. yellow cake mix
1 tsp. baking soda
1 tsp. baking powder
1 c. butter, browned and slightly cooled
3/4 c. granulated sugar
3/4 c. dark brown sugar
2 eggs
3 tsp. vanilla extract
3 tbsp. sprinkles {at the end I realized there weren't too many sprinkles. Feel free to add more!}

In a small bowl, combine the flour, cake mix, baking powder, and baking soda. In a large bowl, cream the browned butter, sugars, eggs, and vanilla. Add in the dry ingredients and sprinkles. Stir until everything is combined. Wrap the cookie dough in plastic wrap and refrigerate for at least 5 hours or overnight. The longer, the thicker the cookie! Bake at 350ºF for 10-20 minutes.

Easy Peach Dump Cake

I was planning on scheduling this post to go up later this week, because I'm hoping to take a break from baking and "eat healthier"… But it's way too good to wait for. 

So I'm spoiling you. 


Known fact numero uno :: I like peaches. 
Known fact numero dos :: they don't have fresh peaches here {lame.}
Known fact numero tres :: I also like cake mix 

AND this dessert has canned peaches and cake mix in it. 

Really, all you do is dump everything in a pan. 

Hence the name Dump Cake… 

So basically, it's as easy as pie. Which is ironic because pie isn't easy. 

But life goes on… There's a lot of things that don't make sense, wouldn't you agree? 



My mom had friends over yesterday afternoon for lunch, and I take any chance I can get to bake for people.

I love making something and it's gone within hours… clearing up the counters for more baked goodness… That I get to share with you wonderful peoples.

Anyways. She suggested making a dessert she used to make.

When she was describing it to me I was drooling.

Some moments in life you just need to have a bib on.

Like when you're watching Unique Sweets. Happens to me EVERY SINGLE DAY. So sad.

I think I could start a little business. And I'll make millions. And you will be my witnesses.

If you're looking for a quick, easy dessert with minimal ingredients, look no FURTHAAAAAAAAAAH!

It tastes like a masterpiece. Which it is. But it's a 5 minute masterpiece… The best kind.

Hallelujah amen.


Easy Peach Dump Cake
slightly adapted from :: this recipe

2 (29 ounce) can sliced peaches, with juice
1 (18.25 ounce) package yellow cake mix
1/2 cup butter
1 cup white sugar
1 teaspoon ground cinnamon

Preheat oven to 350 degrees F (175 degrees C).

Pour canned peaches into a 9x13 inch baking pan; make sure juices cover peaches, if not add a small amount of water to just cover fruit. 

Mix peaches with 1/2 cup of the sugar and sprinkle cinnamon to taste into mixture.

Sprinkle dry cake mix evenly over top of peach mixture. 

Poke holes into cake mix to allow juice through.

Cut stick of margarine into small pats, placing randomly over the top. 

Sprinkle with the remaining 1/2 cup of sugar and a light dusting of cinnamon.

Bake in preheated oven for 25 to 30 minutes, or until the juice mixture is bubbly and the top of the cake mix topping is crusty and golden brown.

Top it off with some powdered sugar and chopped nuts. Best served warm and gooey! :)

Cake Batter Bark


Oh my goodness. I haven't posted in awhile. EEEEEEEK! At least Dorothy stopped on over and shared some deliciousness yesterday. Yay for guests! :)

Anyways. As we all know, white chocolate + cake mix + lots and lots of sprinkles = happiness.


Oh and umm did I mention you can whip up this sweet treat in like… 2 minutes? Plus setting time of course but even that takes not long at all.





So since I had some cake mix left over from those cake batter blondies {aka cake batter crack} I decided to throw it into a version of my favorite Christmas treat… Why not?! I've made cookies, blondies, and truffles… and now cake batter bark! BOOM SHA KA LA KA!

I still have like half of a box of cake mix left and I don't know what to do with it! Maybe I should just use cake mix for what it's for… a cake. Who am I kidding? I'll find something. Pinterest to the rescue!!!




Cake Batter Bark
2 c. white baking chocolate
dash of vanilla {optional}
2-2 1/2 tbsp. white/yellow cake mix {depending on how cake-battery you want it}
1 1/2 tbsp. sprinkles

Melt the white chocolate for 30 second intervals mixing in between. Take it out when it's smooth but still some chunks left. Just keep mixing it and the clumps will work themselves out. 

Add in the vanilla and cake mix. Mix until smooth. 

Spread out the mix onto a cookie sheet with parchment paper/wax paper on top. Top it off with your sprinkles of choice. Let it sit out until set. Then break it up and store in airtight container and refrigerate.

Cake Batter Blondies


These cake batter bars from Lovin' from the Oven have to be one of my all-time favorite bars. LIKE EVER!

When I made these today I think I added too much butter because they turned out awfully thin, but they tasted freaking amazing.

I remember seeing this crazy concoction called Crack Pie from Momofoku Milk Bar on Unique Sweets… As I sat there staring at these wonders, that Crack Pie came to mind. That's what these are…

Delicious crack at that… You're so welcome.

AND you know there has to be reason it's called that… It. is. addictive.

I found myself going back to that pan like a gazillion and seventy seven times. And before you know it, I had eaten a lot… Like a whole row maybe?

My healthy eating habits have seen better days.



Cake Batter Blondies

1 1/4 cup funfetti cake mix
3/4 cup AP flour
1/4 teaspoon baking soda
3/4 cup butter, melted and slightly cooled {I probably used like… a cup.}
1 egg
1 egg yolk
2 teaspoons vanilla
1/2 cup sugar
1/2 cup brown sugar
5 heaping tablespoons sprinkles of your choice 

Preheat oven to 350F. Grease an 8 x 8 inch pan.
Cream both sugars, butter, vanilla, egg, and egg yolk. 
Gradually mix in flour, cake mix, and baking soda until just mixed. Stir in sprinkles.
Spread batter evenly into greased pan.
Bake for 30-35 minutes until top is lightly browned and middle still jiggles slightly. Cool completely before cutting.

Rolo Cake Mix Bars


I know. They look weird.
And by the way that is THREE bars you're seeing.
Yes, THREE!

Oh and one thing I just remembered…
I never but the bottom half of the dough in the oven first.
OOPS. I'm impatient when it comes to my baking…
Probably because I'm so eager to devour my creations. :)

I don't know what went wrong {looks-wise}…
But they sure do taste AHHHHH-MAZING! Nothing went wrong there!

If you're wondering I MAY just have eaten that little
mountain of chocolate-cakey-carmaley goodness. :)

I'm happy I finally made them!
I pinned them on Pinterest awhile ago
and didn't think I would even be able to make them…
They just looked so good.
But then I remembered that one of theVERY FEW
American candies we have here is ROLOs…
WIN!

Rolo Cake Mix Bars
From Cookies and Cups

1 box yellow/white cake mix
5 oz. evaporated milk
{I actually didn't have evaporated milk… Instead I looked up a substitution: part milk and part half-in-half. Maybe that's why they don't look too pretty?}
1/4 c. butter, melted
40 Rolo candies, unwrapped and cut in half

Preheat oven to 350ºF.
Spray a 9x13 pan with cooking spray.
Beat cake mix, evaporated milk, and butter until combined.
Mixture will be thick and sticky.  :)
Divide mixture in half and press 1 half into the bottom of the pan.
Bake until just set, approximately 8-9 minutes.
Remove base from oven and place Rolo candies, caramel-side down on top.
Drop remaining batter on top of Rolos in teaspoon-size amounts.
Bake for 20-24 minutes longer until top begins to golden.
Cool completely before cutting into squares.

Funfetti Cookies


I made these cookies long ago and LOVED them!
They're perfectly chewy, cake batter-y, and 
colorful {which is probably my favorite part}!

So since I had some cake mix left over from those 
Easy Cake Batter Truffles, I figured I'd make these as 
well as the Banana Chocolate Chip Cookies to bring
to the conference this week... 

A little "OOPSY"... I forgot to refrigerate the dough
before popping them in the oven. WHOOPS! But they
turned out like the same as the last time I made them.
GOOD DEAL! :)

Funfetti Cookies
3/4 c. flour
1 1/4 c. funfetti cake mix {I used my yellow cake mix and added truck-loads of SPRINKLES}
1/4 tsp. baking soda
3/4 c. butter
1 egg
1 egg yolk
2 tsp. vanilla
1/2 c. sugar
1/2 c. brown sugar
1 c. chocolate chips {which I left out... Something about cake batter, sprinkles, AND chocolate chips, doesn't sound appealing to me.}

Cream together the butter and sugars. Mix in the egg, egg yolk, and vanilla until creamy. 

Add in the flour, cake mix, and baking soda.

Stir in chocolate chips.

Refrigerate for at least an hour. {or not. hehehe;)}

Preheat oven to 350ºF.

Scoop onto cookie sheets and bake for 12-15 minutes or until 
the edges are golden brown.

Easy Cake Batter Truffles

Here's a yummy and easy-peasy recipe for cake batter truffles incase you missed my guest post at Grateful Belly last week!

Easy Cake Batter Truffles

Ingredients:
1 ½ cups flour
1 cup yellow cake mix
½ cup unsalted butter, softened
½ cup white sugar
1 teaspoon vanilla
1/8 teaspoon salt
3-4 Tablespoons milk
2 Tablespoons sprinkles

Truffle Coating:
16 ounces (8 squares) almond bark (or white candy melts)
4 Tablespoons yellow cake mix
Sprinkles

Beat together butter and sugar using an electric mixer until combined. Add cake mix, flour, salt, and vanilla and mix thoroughly. Add 3 Tablespoons of milk or more if needed to make a dough consistency. Mix in sprinkles by hand. Roll dough into one inch balls and place on a parchment or wax paper lined cookie sheet. Chill balls in the refrigerator for 15 minutes to firm up.
 
While dough balls are chilling, melt almond bark in the microwave in 30 second intervals until melted. Stir between intervals. Once melted, quickly stir in cake mix until incorporated completely. Using a fork, dip truffles into almond bark and shake of excess bark by tapping the bottom of the fork on the side of your bowl. Place truffle back on the cookie sheet and top with sprinkles. Repeat with remaining balls until finished.

Chill cake batter truffles in the refrigerator until serving. Makes around 24-30 truffles.

Cake Batter COOOOOKIEEEEEEES!!!!

I was so insanely excited when my mom asked me to make something for my brother's soccer party tonight 
{which probably isn't going to happen because it was supposed to be outside and now it's pouring rain. But oh well! More wonderful cookies for me and my youth group tonight, I guess! hahahaha(;} 

Remember those awesome mouth-watering BARS  
I made awhile ago? 
Well THESE are a cookie version! MMMMM... So yummy! 
I haven't actually tasted one yet 
{that is the finished product- however I have tried the dough... Don't worry. They're not poisonous!}, 
but they sure do smell good enough to take a bath in. (;
Enjoy this recipe from Lovin' From The Oven

CAKE BATTER COOKIES
Ingredients:

  • 3/4 cup flour
  • 1 1/4 cup funfetti cake mix
  • 1/4 tsp. baking soda
  • 3/4 cup softened butter
  • 1 egg
  • 1 egg yolk
  • 2 tsp. vanilla
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 cup chocolate chips

Directions:
  1. Cream together the butter and sugars. Mix in the egg yolk, egg, and vanilla until creamy. 
  2. Add in the flour, cake mix, and baking soda.
  3. Stir in the chocolate chips.
  4. Refrigerate for at least an hour.
  5. Preheat oven to 350.
  6. Scoop heaping tablespoons of dough onto cookie sheets. 
  7. Bake for 12-15 minutes, until the edges are golden.


AND TADAAAAAAA! 
{at this point, I gave in and "sampled" one... PURE DELICIOUSNESS!!!!}

Cake Batter Bars



I saw these bars awhile ago and wanted to make them so bad! I finally did, and {LOVED} them... They were so perfectly chewy, it was like having cake batter 
melt in your mouth!(: I had people over last night, and they were gone
by the end of the night. I even had a friend ask me for the recipe!

Cake Batter Bars
{recipe from Lovin' From the Oven}

1 1/4 c. funfetti cake mix
3/4 c. AP flour
1/4 tsp. baking soda
1 egg
1 egg yolk
2 tsp. vanilla

5 HEAPING tablespoons sprinkles of your choice(:


  1. Preheat oven to 350F. Grease an 8 x 8 inch pan.

White Chocolate S'mores Gooey Cake Bars

Words cannot describe how perfectly DELICIOUS these 
bars were! Not only were they, moist, gooey, crunchy, and every 
other texture you can think of, but they were easy and fast- very convenient!(; 
Enjoy this recipe from Lovin' From the Oven!

   White Chocolate Gooey Cake Bars

1 box yellow cake mix
1 egg
1/2 c. butter {1 stick}, softened
4 1/2 full graham crackers
10 oz. bag white chocolate chips
2 c. mini marshmallows
1/2 c. sweetened condensed milk

  1. Preheat oven to 350 degrees. 
  2. Line an 8×8 inch baking pan with aluminum foil, making sure that it goes up all the way on the sides of the pan.
  3. Mix together the cake mix, egg, and butter with hands until a nice, thick dough forms. 
  4. Press half of the dough into the bottom of the prepared pan. Layer with graham crackers, white chocolate chips, then marshmallows. Top the mixture with remaining dough and press evenly. Drizzle condensed milk on top.
  5. Bake for 28-33 minutes, until completely cooked and golden brown on top. Remove from oven. 
  6. Let the bars cool for 5 minutes, and then remove the bars from the pan, using the aluminum foil.
  7. Cool completely and use a knife that has been run under hot water (do after every couple of cuts) to cut into pieces.
